为什么大红袍不是红茶

一,大红袍属于青茶,也就是乌龙茶,这是根据制茶工艺来划分的

大红袍的来历据说是福建天心寺的和尚用这里的茶叶治好了一名官员的病,这个官员为了表达感激之情,把身上的红袍脱下盖在茶树上,大红袍也因此而得名。





大红袍的制作方法跟青茶是一样的,青茶是六大类茶叶中制作工艺最复杂的,主要包括日光萎凋、室内萎凋、摇青、杀青、初揉、包揉和干燥这几道工序,形成了“绿叶红镶边”,耐冲泡和具有优雅的兰花香气等特点。





二,红茶的制作工艺

红茶可能是中国茶叶品种被国外引进和推广最多的茶叶,像印度红茶和斯里兰卡红茶都是从中国引种过去的,而且不少外国人都对红茶情有独钟,因为红茶经过全发酵少了茶叶的苦涩味,喝起来比较柔和,还可以加入牛奶、白糖和果汁等冲泡,因此比较适合他们的口味。





红茶的加工工艺跟乌龙茶(大红袍)比要简单的多,也就是经过萎凋、揉捏、发酵和干燥,因为发酵的彻底,所以红茶的茶汤大多是呈红色,红茶的名称也是由此而来。

中国红茶的优质产区不少,像滇红、正山小种、祁门红茶等等,优质的红茶茶汤红亮,冲泡后茶汤贴碗一圈金黄发光,这个金圈越厚说明茶叶品质越好;还有就是红茶晾凉后会出现“冷后浑”,这是因为红茶是发酵的茶叶,冲泡晾凉后茶叶中的物质都融入茶汤中所出现的情况。

三,大红袍为何不是红茶

①.茶叶的制作工艺不同:大红袍制作过程中要进行摇青和杀青两道工序,而且是轻微发酵的茶;而红茶的制作'中没有摇青和杀青,并且红茶是全发酵茶,因此大红袍虽然外观上跟红茶有些类似,但两者完全不是一种茶。

②.茶汤的颜色也不一样:大红袍的茶汤是黄色的,而且冲泡后的大红袍茶叶是绿色带红边,这跟红茶的红汤是完全不一样。





③.味道上也有很大差别:大红袍是带有兰花香气的岩茶,喝起来回甘明显,但是空腹喝对肠胃比较刺激,因此不适合空腹饮用,红茶的味道比较柔和,因为全发酵茶对于肠胃的刺激也不明显。

④.冲泡方式:大红袍需要用盖碗来冲泡,这样才能体现出它浓郁的香味,而红茶用白瓷杯等冲泡即可,要论讲究程度,红茶的冲泡是要跟大红袍有所距离的

The production method of Dahongpao is the same as that of green tea. Green tea has the most complicated production process among the six types of tea, mainly including sunlight withering, indoor withering, shaking green, killing green, initial kneading, wrapping and drying. , forming a "green leaf red edge", resistant to brewing and has the characteristics of elegant orchid aroma.





Second, the production process of black tea

Black tea may be the most imported and popularized Chinese tea varieties abroad. For example, Indian black tea and Sri Lankan black tea were introduced from China, and many foreigners have a soft spot for black tea, because black tea is completely fermented and leaves less tea leaves. The bitter and astringent taste is softer to drink, and it can also be brewed by adding milk, sugar and fruit juice, so it is more suitable for their taste.





The processing technology of black tea is much simpler than that of oolong tea (Dahongpao), that is, after withering, kneading, fermentation and drying, because of the thorough fermentation, the tea soup of black tea is mostly red, and the name of black tea is also derived from this. .

There are many high-quality black tea producing areas in China, such as Dianhong, Zhengshan Souchong, Qimen black tea, etc. The high-quality black tea soup is red and bright. After brewing, the tea soup sticks to the bowl with a golden circle of light. The thicker the golden circle, the better the quality of the tea. The better; there is the "cold and muddy" after the black tea is cooled, this is because the black tea is fermented tea, and the substances in the tea leaves are integrated into the tea soup after brewing and cooling.

3. Why is Dahongpao not black tea?

①. The production process of tea is different: in the production process of Dahongpao, two processes of shaking and fixing are required, and it is slightly fermented tea; while there is no shaking and fixing in the production of black tea, and black tea is fully fermented tea, so Although Dahongpao is somewhat similar in appearance to black tea, the two are not the same type of tea at all.

②. The color of the tea soup is also different: the tea soup of Dahongpao is yellow, and the brewed Dahongpao tea leaves are green with red edges, which is completely different from the red soup of black tea.





③. There is also a big difference in taste: Dahongpao is a rock tea with the aroma of orchids. It tastes very sweet, but drinking on an empty stomach is more irritating to the stomach, so it is not suitable for drinking on an empty stomach.
