铁观音和武夷岩茶的区别

铁观音和武夷岩茶均为乌龙茶中的极品，两者在口味上有很大区别。

一般说来观音主要是轻火工艺的茶，武夷岩是重火工艺的茶，两者各具特色，同为乌龙名品。

地 域

铁观音，以独有的“观音韵”而闻名于世，产于福建省安溪县外地亦多有种植，但品质稍逊。

武夷岩茶，以“岩骨花香”风靡茶市，产于福建闽北“秀甲东南”的武夷山一带。

品 种

铁观音茶树的品种为铁观音、黄旦、本山、毛蟹、梅占、大叶乌龙等，适制乌龙茶，品质特优，滋味醇甘，回甜悠长。

武夷岩茶的品种，历来首推五大名丛，即大红袍、白鸡冠、水金龟、半天腰、铁罗汉，各具特色而又岩韵十足。

工 艺

铁观音萎凋与发酵程度都较轻，需要包揉，外形弯曲紧结、重实、蝌蚪状。

相对来说，武夷岩茶的萎凋和发酵程度更高，但不需包揉成条。

香 气

坊间评价乌龙茶，有“南香北水”之说，“南香”指的就是铁观音的香气。

铁观音的香气高扬，带清香雅韵，冲泡后有天然兰花香，香气馥郁持久。

岩骨生花香，肉桂韵久长。武夷岩茶香气带花、果香，瑞则浓长、清则幽远，有“香不过肉桂”之说。

滋 味

铁观音鲜爽淡雅，生津甘滑，细腻饱满，浓香及陈香型铁观音则滋味醇厚，滋味强回甘明显。

The varieties of Tieguanyin tea trees are Tieguanyin, Huangdan, Benshan, Hairy Crab, Meizhan, Daye Oolong, etc. They are suitable for making Oolong tea, with excellent quality, mellow taste and long sweetness.

Wuyi rock tea varieties have always been the first to promote the five famous clusters, namely, Dahongpao, White Cockscomb, Water beetle, Half-Tianyao, and Iron Luohan, each with its own characteristics and full of rock charm.

Craftsmanship

Tieguanyin has a lighter degree of withering and fermentation, and needs to be rubbed. The shape is curved, tight, heavy, and tadpole-like.

Relatively speaking, Wuyi rock tea has a higher degree of withering and fermentation, but it does not need to be wrapped into strips.

Aroma

In the evaluation of oolong tea in the market, there is a saying of "South Fragrance and North Water", and "South Fragrance" refers to the fragrance of Tieguanyin.

The fragrance of Tieguanyin is high, with a delicate fragrance and elegant rhyme. After brewing, it has the fragrance of natural orchids, and the fragrance is rich and long-lasting.

It has a floral fragrance from rock bones and a long-lasting cinnamon rhyme. Wuyi rock tea has a floral and fruity aroma, while Rui is strong and long, and clear is distant. It is said that "the fragrance is not cinnamon".

Taste

Tieguanyin is fresh and elegant, the raw body fluid is sweet and smooth, delicate and full, and the strong and old-scented Tieguanyin has a mellow taste, and the taste is strong and sweet.
