凤凰单丛,属乌龙茶类。产于广东省潮州市凤凰凤凰山。该区濒临东海,气候温暖,雨水充足,终年云雾弥漫,空气湿润,昼夜温差大,年均气温在20℃左右,年降水量1800毫米左右,土壤肥沃深厚,含有丰富的有机物质和多种微量元素,有利于茶树的发育与形成茶多酚和芳香物质。

单丛茶,系在凤凰水仙群体品种中选拔优良单株茶树,经培育、采摘、加工而成。因成茶香气、滋味的差异,当地习惯将单丛茶按香型分为黄枝香、芝兰香、桃仁香、玉桂香、通天香等多种。因此,单丛茶实行分株单采,当新茶芽萌发至小开面时(即出现驻芽),即按一芽、二三叶标准,用骑马采茶手法采下,轻放于茶罗内。有强烈日光时不采,雨天不采,雾水茶不采的规定。

一般于午后开采,当晚加工,制茶均在夜间进行。经晒青、晾青、碰青、杀青、揉捻、烘焙等工序,历时10小时制成成品茶。其外形条索粗壮,匀整挺直,色泽黄褐,油润有光,并有朱砂红点;冲泡清香持久,有独特的天然兰花香,滋味浓醇鲜爽,润喉回甘;汤色清澈黄亮,叶底边缘朱红,叶腹黄亮,素有“绿叶红镶边”之称。具有独特的山韵品格。

茶叶产地

凤凰单丛正宗产地以有"潮汕屋脊"之称的凤凰山东南坡为主,分布在海拔500公尺以上的乌崇山、乌譬山、竹竿山、大质山、万峰山、双譬山等潮州东北部地区。凤凰单丛茶的采制,以特早熟种的白叶单丛最先开锣,在春分(3月20日)前后陆续开采,这是一种蜜兰春型的高档茶,有岭头单丛茶、乌东蜜兰香单丛、金奖工夫白叶茶等品种。毛茶制成后,再经过有10天的精制,即4月初可上市。

清明(4月4日)前后早熟种单丛开始采摘,有肉桂香单丛、金玉兰、蛤股捞等。单丛茶采制旺季在清明至谷雨期间,大部分老名丛茶都在这段时间采摘,有宋种1号、黄桅香2号、芝兰香及各种特殊香型茶。

茶种分类

中熟种茶 桂花香单丛、抽花香单丛、姜花香单丛、杏仁香单丛等,都是在清明后四五天采摘的中熟种茶。桂花香单丛的成茶,条索紧直油润,呈缮鱼色,汤色橙黄清澈,具有自然桂花香气,滋味甘醇爽口持久,每千克售价最高达9600元。姜花香单丛因有轻微的生姜味道并带有姜花香气而得名。2003年每株采制春茶2市斤,每斤售价高达1.2万元。这些特殊香型茶精制也需15天左右。

迟熟种茶 谷雨至立夏前后采摘的是迟熟种,有宋种八仙、玉兰香、夜来香、石古坪、老仙翁等。此时间采摘的单丛大都香气高锐幽长、滋味浓醇,同样在毛茶制成后,经15天退火熟化,才能品尝出真正色、香、味及老丛山韵蜜味。

茶香特点

山韵介绍 优质单丛茶品质都具有“香”、“活”、“甘”。香:口含茶汤有清香芬芳之气冲鼻而出,有齿颊留芳之感,隽永幽远,清快爽适,在于茶本身的香,还有精心培育的天然花果香,绝不加任何香精,有别于窨茶(用茉莉花、玫瑰花、玉兰花之类的香花花瓣人工施于茶坯窨制而成的花茶,香而不清)。润滑、爽口的快感、少涩感、喉感清洌。甘:回甘快而力度强,清爽甘滑,俗称“有喉头”。

Dancong tea is a series of fine individual tea trees selected from the group of Phoenix narcissus species, which are cultivated, picked and processed. Due to the difference in the aroma and taste of the finished tea, the local custom divides Dancong tea into yellow stick fragrance, Zhilan fragrance, peach kernel fragrance, jade cinnamon fragrance, Tongtian fragrance, etc. according to the fragrance type. Therefore, Dancong tea is picked separately from each plant. When the new tea buds germinate to the small open surface (that is, the resident buds appear), they are picked according to the standard of one bud and two or three leaves. Inside. It is generally mined in the afternoon, and processed that night, and tea is made at night. Tea origin

The authentic production area of Phoenix Dancong is mainly on the southeast slope of Phoenix Mountain, known as the "Roof of Chaoshan". It is distributed in Wuchong Mountain, Wule Mountain, Zhugan Mountain, Dazhi Mountain, Wanfeng Mountain, and Shuangpi Mountain above 500 meters above sea level. And so on in the northeastern part of Chaozhou. The harvesting of Phoenix Dancong tea started with the extra-early white leaf Dancong, and it was mined one after another around the vernal equinox (March 20). This is a high-grade honey orchid spring tea, including Lingtou Dancong tea. , Wudong Milanxiang Dancong, Gold Award Gongfu White Leaf Tea and other varieties. Early-maturing species Dancong began to be picked around the Qingming Festival (April 4), such as cinnamon Xiangdancong, golden magnolia, clams and so on. The peak season for the production of Dancong tea is from Qingming to Guyu. Most of the old famous Congcha is picked during this period, including Songchong No. 1, Huangweixiang No. 2, Zhilanxiang and various special fragrant teas.

Tea classification

Moderately mature teas, Osmanthus Fragrant Dancong, Suhuaxiang Dancong, Ginger Flower Fragrant Dancong, Almond Fragrant Dancong, etc., are all mid-mature teas picked four to five days after Qingming. The osmanthus-fragrant single-cluster tea has a tight, straight, oily, fish-like color. The soup is orange-yellow and clear. It has a natural osmanthus fragrance, a sweet and refreshing taste, and the price is up to 9,600 yuan per kilogram. Ginger Flower Fragrant Dancong is named after it has a slight ginger taste and a ginger flower aroma. Late-maturing tea varieties The late-maturing varieties are picked before and after Guyu to Lixia, such as Song Chong Baxian, Magnolia Fragrant, Nocturnal Orientalis, Shiguping, Lao Xian Weng, etc. Most of the single clusters picked at this time have a sharp, long and mellow aroma and a strong taste.
