为什么安溪铁观音秋茶最好喝呢?

白露之后的铁观音茶叶,味道更香,茶水喝起来比较滑顺。


安溪铁观音茶叶跟季节是有很大关系的,有些气候比较适合铁观音茶叶的发酵最后形成自然香。



在安溪,铁观音茶是用铁观音树种加工的乌龙茶,一年分四季采制:春茶、夏茶、暑茶、秋茶,尤其秋茶之香气特高,俗称“秋香”!

所谓“春茶苦,夏茶涩,要好喝,秋白露”,所谓秋白露即指秋茶。


那么,为什么安溪铁观音秋茶最好喝呢?




秋茶中的高档铁观音,其制作条件非常苛刻,要求鲜叶嫩度合适,且必须是晴天采摘的,制作过程晒青需有“时阴时阳”的光照,晾青需有微弱的北风,即如“秋高气爽”的天气,而这则仅仅是必要的条件,还得需要配已精湛的制作技术。




如在做青阶段,要灵活地掌握“看天做青”和“看青做青”。俗话说“春茶口感醇厚、回甘强烈,夏茶苦,署茶涩,秋茶最好,香气高长,要好喝,秋白露(秋茶)”。




秋茶当中,铁观音当属代表。时下正是秋茶上市季节,很多茶商都闻香而动,专门来到中国安溪茶都,追寻品茗秋茶铁观音那清幽细长的香气。之所以说一年四季的铁观音要数秋茶。




铁观音发源地-

安溪铁观音名扬天下,可是很多朋友却不知道,铁观音虽产自安溪县,但并不是整个安溪县都适合种植铁观音,正如并不是整座武夷山都适合种植大红袍一样!当地的安溪人一般只喝几个乡镇产的铁观音,尤其是安溪铁观音的发源地——西坪镇!

到安溪不到西坪镇,就等于拜观音没到普陀山,因为西坪镇是铁观音的发源地。一进入西坪,我们看到漫山遍野都是茶树。西坪这个“坪”是坡地的意思,西坪在安溪也是平地比较少的。145平方公里辖区内,平地面积还不到14%,但坡地适合种茶树。




西坪铁观音的特点是:汤浓韵明不是很香,但其所制铁观音茶叶的茶质,采用纯粹传统型制法。因此茶质相对实在、地道。

The local Anxi people generally only drink Tieguanyin produced in a few townships, especially Xiping Town, the birthplace of Anxi Tieguanyin!

If you don't reach Xiping Town in Anxi, it is equivalent to worship Guanyin but not Putuo Mountain, because Xiping Town is the birthplace of Tieguanyin. As soon as we entered Xiping, we saw tea trees all over the mountains. The "ping" of Xiping means sloping land, and there is relatively little flat land in Anxi. Within the jurisdiction of 145 square kilometers, the flat area is less than 14%, but the sloping land is suitable for planting tea trees.




The characteristics of Xiping Tieguanyin are: Tangnong Yunming is not very fragrant, but the tea quality of its tea is purely traditional. Therefore, the quality of tea is relatively solid and authentic.
