为什么说陈年铁观音以老为贵?


陈年铁观音是以浓香型铁观音作为基础长时间醇化而成,民间也称之为“老茶”。据悉,包括安溪铁观音集团、珍田丁香茗、八马、华祥苑在内的不少知名铁观音茶企都有推出铁观音陈茶产品,几家茶企推出的陈年铁观音覆盖了5年、8年、10年、15年、20年、28年等几种年限,最高年限的陈茶为30年,市面上的陈年铁观音定价高的甚至达到每斤数万元。


陈茶的数量非常有限,只有历史悠久的茶厂才有。安溪茶厂始于1952年,是现存的最早生产铁观音的茶厂之一。安溪铁观音集团把安溪茶厂存有的少量“陈年铁观音”进行市场化包装,已经形成丰富的铁观音产品系列,力求让消费者在品饮中接受铁观音的传统制作工艺。


陈年铁观音推出并被市场接受,正是铁观音茶多样性的一种表现,可以让部分资深茶客重新体验铁观音的传统韵味。但是,市场上出现的以清香型否定浓香型或以浓香型否定清香型的观点都是错误的。他还指出,陈年铁观音、浓香型铁观音、清香型铁观音均要遵循适度发酵的原则。但是市面上个别“山寨版”铁观音片面追求清汤绿水,制作过程中发酵严重偏轻或者“拖酸”,饮后常常不适。
