值此2021年铁观音秋茶上市之际,谨以此文与安溪铁观音茶农共勉!


秋风萧萧、天高云淡。


薄雾轻笼,茶香氤氲。


秋香,天生丽质;铁观音秋香,如痴如醉。




茶客发现,进入秋冬,最香最鲜的茶叶是秋茶铁观音,这是压轴戏,这是造物主创作的“夕阳伴我归”。




秋香铁观音,她之所以能产生如梦如幻的感觉,是因为她长时间汲取大地的滋养,与大自然界有着最长时间的拥抱;是因为她在秋高气爽时与阳光最柔艳时产生的,那是自然界最热烈的长吻;夜间凉意时,她几经多次翻滚激浪,让灵魂的精华破体而出,让至纯的香韵穿透细胞壁,吐露芬芳。



《茶经》云:采不时,造不精,杂以卉莽,饮之成疾。说的是,如果不及时采摘,工艺不够精湛,茶里充斥着杂草枯叶,喝完这样的茶就有可能生成疾病。




秋分至寒露前后,是安溪铁观音高端秋茶采制最适物候期,辛苦的茶农收获丰收,痴心的茶客翘首以盼秋香上市。今年的的秋天,因为疫情影响,显得有些特殊,有些困难,但也有些期许。在此,我与广大茶农做如下分享,祈福大家有个好收成。




一手抓抗疫,一手抓采制




虽然我们取得了新冠疫情防控的阶段性胜利,但我们不能掉以轻心,要时刻保护自己,要时刻外防输入,要严格遵守疫情防控措施。




“早采三天是个宝,晚采三天是根草”。铁观音采摘期不等人,疫情会影响我们对外招工,我们要更加辛苦,利用本地工加班加点采茶和制茶。



既要抓产量,更要抓质量




目前,虽然我国铁观音茶叶产大于销现象比较突出,但质量好的茶叶不愁销路。好茶好价,好茶好销。一斤好茶胜过几斤劣茶,我们要的是效益。




气候不好不要采,安溪铁观音茶青不好不制作,适销对路多制作,加工工艺更精湛,香高味醇最重要。




调节开采期,错峰保收成




虽然茶叶讲究季节,但通过调控技术也可以适当调节采摘期。我们可以通过茶树修剪等方式,错开采摘高峰期,延长秋茶开采时间,甚至在早冬时期还可以采制,避免采制工人不足造成损失。同时,我们要备好仓库,加强线上贸易,源源不断将秋茶输送到全国各地。

The tea guest discovered that in autumn and winter, the most fragrant and freshest tea is the autumn tea Tieguanyin. This is the finale. This is the "Sunset with Me Home" created by the Creator.




Qiuxiang Tieguanyin, the reason why she can have a dreamlike feeling is because she has absorbed the nourishment of the earth for a long time and has the longest embrace with the natural world; it is because she produces it when the autumn is high and fresh and the sun is the softest and beautiful. , It was the warmest long kiss in nature; when the night was chilly, she went through several tumbling waves, breaking the essence of the soul, allowing the purest fragrance to penetrate the cell wall and reveal the fragrance.

"Three days early is a treasure, three days late is a root grass." The Tieguanyin picking period does not wait for people. The epidemic will affect our recruitment of foreign workers. We have to work harder and use local workers to work overtime to pick tea and make tea.



We must not only pay attention to the output, but also pay attention to the quality




At present, although the phenomenon that my country's tea production exceeds sales is relatively prominent, there is no worries about sales of high-quality tea. Good tea is at a good price, and good tea is sold well. A catty of good tea is better than a few catties of inferior tea. What we want is benefit.




Don't pick it if the weather is bad, don't make it if the green tea isn't good, it's more marketable and more produced, the processing technology is more exquisite, and the most important thing is that it is fragrant and mellow.




Adjust the mining period, stagger the peak to ensure the harvest




Although the tea season is particular about the season, the picking period can also be adjusted appropriately through regulation technology. We can use tea tree pruning and other methods, wrong mining and picking peak period, extending the mining time of autumn tea, even in the early winter period can also be harvested, to avoid losses caused by insufficient harvesting workers. At the same time, we must prepare warehouses, strengthen online trade, and continuously deliver autumn tea to all parts of the country.
