安溪中闽魏氏生态铁观音茶园

福建泉州安溪,这里有着福建省最知名的茶园——安溪中闽魏氏生态茶园。茶园的主人魏贵林,是魏氏先祖魏荫第十代传人,也是铁观音非物质文化遗产传承人。


魏贵林,三百年制茶传人,国家高级评茶师,中国制茶大师。




魏家祖先早年在老家松林头打石坑小溪边发现了一株与众不同的茶树,采制出来的茶叶与其他茶叶的香气滋味特别不一样,乾隆皇帝品后大加赞赏,称是人间茶王,因观音托梦,干茶色泽似铁,固赐名“铁观音”,魏氏家族也因此成为铁观音世家。


自己不敢喝的茶,一定不能给别人喝。


这句质朴的话,是老魏家的祖训。




做茶是老魏的父亲教他的,十几岁时他基本上就把茶叶的采摘、制作都学会了。老魏的弟弟魏贵扬,也是安溪工艺制茶大师。


怀揣着把魏氏茗茶火遍中国的梦想,魏贵林准备进军北京。结果,他在北京看到一篇关于茶叶质量安全的负面报道,其中农药残留,次货,假货滥充于世。经过思考后,老魏改变了投资计划,决定回到家乡,从源头上保证茶叶的安全性。


做这个决定的时候,有人反对也有人支持。


老魏始终认为没有从源头上把控好产品的品质,企业是难以长久发展的。当然,决定是否正确,只能通过时间来验证。从那时开始,他便走上了一条“愚公移山”的路。




在老魏看来,一壶好茶来自一片好茶园。


为了找到生态环境从未被开发过,面积足够大,湿度、温度、海拔都适宜种植铁观音的茶山,老魏走遍了整个安溪,几个月后,终于寻觅到了梦想中的一片山林。


随后,八年的时间里,老魏的茶园从一片荒无人烟的山地发展到现在近万亩的生态茶庄园。


那时候的条件非常艰苦,没路开路,没电拉电,老魏整整在临时的工棚里面过了三年。这背后的付出和辛酸,只有魏氏人才能体会得到。


为了让茶园有着一整套的生态循环系统,老魏只用2/5用来种茶,其余3/5全部用来种树。于是就有了如今这150万株美国松、圆柏、香樟、桂花……

为了茶园的永续发展,每个环节老魏都不敢松懈。


从未在茶园中用过任何化学农药、化肥、除草剂,而是采用物理防控、有机肥、人工除草(尽管人工成本是使用杀虫剂的1000多倍)。


老魏的茶叶每年都要在行业里比别人晚半个月才上市。每一批次的成品茶都要送去做农残等检测,可以说是世界上最安全的茶叶,每年单花在产品检测上面的费用,就要一两百万。


从04年开始,历经到今年18年,总共投入的资金是将近1.5个亿。




魏氏团队独创的铁观音红茶,更是通过了世界上最严格的欧盟SGS机构481项农残检测。


由于铁观音红茶融合了铁观音、金骏眉的技艺精髓,汇聚三百年乌龙经典和四百年红茶神韵;既不失掉铁观音的好滋味,也不会有喝了睡不着的困扰。


这一罐小小茶叶的背后却是老魏带着技术团队历经一千多个日夜的潜心钻研。




制成一泡铁观音需要耐得住极多繁琐的工序-----凉青、晒青、做青、炒青、揉捻、初培、复培、复包揉、文火慢烤、拣簸等才得一泡上品好茶。


手工制茶耗时又耗力,所以制作时是需要靠凭借多年的经验来拿捏制作火候和技术的,这是机器无法替代的。所以,制茶就如十年磨一剑急不得,得等它慢慢发酵成型,显现出观音韵,才方得始终。




以茶可行道,以茶可雅志。铁观音如青橄榄,初入口略有苦涩,入喉后渐渐回甘,历经时间催化的铁观音感醇厚、细腻甘滑,喝下去回味无穷。


作为铁观音非遗传承人,老魏一直将“为天下茶人提供健康、安全、优质的铁观音”奉为自己的使命与责任。支撑“魏氏模式”一路走来的根源,其实就在于此

Wei's father taught him how to make tea. When he was a teenager, he basically learned how to pick and make tea. Wei Guiyang, Wei's younger brother, is also an Anxi craft tea maker.


With the dream of spreading Wei's tea in China, Wei Guilin is ready to enter Beijing. As a result, he saw a negative report on the quality and safety of tea in Beijing, in which pesticide residues, defective products, and fake products were all over the world. After thinking, Lao Wei changed his investment plan and decided to return to his hometown to ensure the safety of tea from the source.


When making this decision, some people opposed it and others supported it.


Lao Wei always believed that it would be difficult for a company to develop for a long time without controlling the quality of its products from the source. Of course, whether the decision is correct can only be verified by time. Since then, he has embarked on a road of "Foolish Old Man Moving Mountains".




In Old Wei's view, a pot of good tea comes from a good tea garden.


In order to find an ecological environment that has never been developed, the area is large enough, and the humidity, temperature, and altitude are suitable for planting Tieguanyin. Lao Wei traveled throughout Anxi. After a few months, he finally found the mountain forest of his dreams.


Later, in eight years, Lao Wei's tea garden developed from an uninhabited mountainous land to an ecological tea estate of nearly 10,000 mu.


At that time, the conditions were very difficult. There was no way to open the road, no electricity to pull the electricity, and Old Wei spent three years in a temporary work shed. Only the Wei people can appreciate the hard work and bitterness behind this.


In order for the tea garden to have a complete ecological cycle system, Lao Wei used only 2/5 for planting tea, and the remaining 3/5 for planting trees. So there are now 1.5 million American pine, juniper, camphor, osmanthus...

For the sustainable development of the tea garden, Wei dare not relax in every aspect.


No chemical pesticides, fertilizers, or herbicides have been used in tea gardens, but physical prevention and control, organic fertilizers, and artificial weeding are used (although the labor cost is more than 1,000 times that of pesticides).


Lao Wei's tea is only available in the industry half a month later than others every year. Each batch of finished tea must be sent for pesticide residue testing. It can be said that it is the safest tea in the world. The annual cost of product testing alone is one to two million.


Starting from 2004, through 18 years of this year, the total investment is nearly 150 million.




The original Tieguanyin black tea created by Wei's team has passed the world's most stringent EU SGS agency 481 pesticide residue testing.


Because Tieguanyin black tea combines the technical essence of Tieguanyin and Jin Junmei, it brings together 300-year oolong classics and 400-year-old black tea charm; it will not lose the good taste of Tieguanyin, and there will be no trouble sleeping after drinking it.


Behind this small pot of tea is Old Wei and the technical team who have gone through more than a thousand days and nights.




Making a bubble Tieguanyin needs to withstand a lot of cumbersome processes --- cool green, sun green, make green, stir-fried green, kneading, initial training, re-cultivation, compound kneading, slow roasting, picking Wait until you have a good tea.


Hand-made tea is time-consuming and labor-intensive, so it is necessary to rely on years of experience in the preparation of the heat and technology, which cannot be replaced by machines. Therefore, making tea is like making a sword for ten years.




Tea can be used to make Taoism, and tea can be used for elegance. Tieguanyin is like a green olive. The taste is slightly bitter at first, and it gradually becomes sweet after entering the throat. The Tieguanyin feels mellow, delicate and smooth over time, and the aftertaste is endless after drinking.


As the non-genetic inheritor of Tieguanyin, Lao Wei has always regarded "providing healthy, safe and high-quality Tieguanyin for tea people in the world" as his mission and responsibility. This is actually the root that supports the "Wei's Model" along the way
