88万陈年安溪铁观音开封,焕发老茶铁观音新生命

8月31-9月3号在潭州国际会展中心举行的佛山国际茶博会上,由自兰仓集市提供的一件价值88万的老铁现场开箱品鉴,瞬间引起全国茶界风轰动,短短几小时内刷爆朋友圈,获得数万的转发量,赢得了老铁爱好者的一致好评。

究竟什么样的老铁竟能引起如此轰动?我们联系了自兰仓集市创始人郑朝根先生。


郑总介绍到,自己来自安溪铁观音发源地西坪,对老铁再熟悉不过了;出生于茶山上,生长在茶园中的他,深深体会到茶农种茶苦、卖茶难,励志要帮助茶农解决茶叶销售问题,与团队共同研发了自兰仓集市,恰逢佛山国际茶博会的举办,受主办方的邀请联合推出千款珍惜老茶展示品鉴活动,在老茶区展示了各种珍惜老茶,其中老铁占据一半江山,汇集了15-40年的各种原装老铁数百款,记录了安溪茶产业的发展史,赢得观众的好奇,也让很多茶行业从业者想起了无铁观音不成店的辉煌历史,对铁观音二次腾飞注入新能量。



本次开箱品鉴的老铁也是经过协商,得到收藏家吴海波先生的认同和慷慨,也趁这个机会展示一下老铁的魅力,让更多人认识老铁,了解老铁。

当小编问到藏家的时候,他介绍:来自广州的收藏家吴海波先生是铁观音的忠实粉丝,对老铁更是爱不释手,很早就开始收藏老铁,由于本人不愿意亲自出面,所以由他来代开封。这次共带了两箱同款老铁,原封14公斤一箱,从外箱的记号上清晰可见“特音王”三个字,说明此茶在30年前已经是特级观音王。一箱开封品鉴,另一箱供观众参观。


谈到88万价值时他告诉小编,这箱老铁远远不止这个价值,在投资角度还会有巨大的发挥空间,以老普洱来做参照物,80-90年代的普洱茶,市场上很容易就能找得到,而且价格也非常昂贵。老铁不一样,2010年以后的比较容易买到,00年-10年铁观音处于高速发展期,市场基本供不应求,很难有存下来的老茶,90年代的还能找得到一些散茶,80年代的非常稀少,更不用说木箱原封的,全国估计也找不出多少箱,开一箱少一箱,再次出现价值可能就不一样了。




老铁是指陈年铁观音,也就是老铁观音的说法,简称“老铁”.并不是所有的陈年铁观音都能称得上老铁,老铁对储存也是颇有讲究,首先要用上好的传统工艺正味铁观音,精选后经过低温烘焙将含水量控制到3%以内,密封置于石木结构的特别仓窖中储藏,酷暑不热,严寒不冷,促进其后熟作用及一系列变化,“醇、滑、清、爽”沉淀着大量精华物,沉香凝韵,绵甜甘醇。


一般存放5-30年,30年以上的目前市场上非常稀少,仅安溪老茶区民间茶农有少量收藏。



相传,清朝时,有个叫林福隆的员外肠胃不好,有一天肚子胀得很厉害,吃不下饭,到处找大夫看症状也没改善。家里人急忙到祖宅祈求神灵保佑,当天晚上,林员外做梦时得到仙人点化。第二天早上,按照梦里仙人的指点,家里人翻遍祖屋,在屋角找到色泽乌黑的老茶,然后将其煮给林员外喝,结果,林员外肚子胀的毛病竟然好了。


清代有首《闽茶曲》唱道:“雨前虽好但嫌新,火气未除莫接唇。藏得深红三倍价,家家卖弄隔年陈。”先人早已认识陈年茶药理保健作用。安溪从产茶至今,开始也是把茶当神圣药使用。民间的不少茶农每年都有存茶于陶罐的习俗,遇风寒冷热以陈茶当药。一直如今,仍有许多茶农、茶企保留此种习惯,像祖先一样,把舍不得喝、舍不得卖的茶储存起来。

多少年才叫老铁?


个人认为,10年以上的铁观音,才能称为老铁,而10年以下5年以上的茶叶,因为陈化作用还不够,只能称之为陈茶。年份是衡量老茶品质的重要标准,但不是唯一标准。安溪铁观音在保存良好的情况下,15-30年这个年份段,茶叶的陈化、滋味、口感、药理等都达到一个顶峰,是最好的。


什么铁观音都可以存成老铁、陈茶吗?


“今日好茶,才能成为明日上好的老茶。”茶叶基础非常重要,茶叶底子要好,还要保存得当。“并不是所有铁观音都可以存,也不是随便放几年就是老茶,就可以增值了。必须要保管妥当,没有异味、潮味、霉味。”



什么样的铁观音是理想的存储好茶


铁观音的陈年或老铁,既然是源于传统与民间,这二十年来,铁观音一直走清香型,显然和古时存茶有严格区别。所以想存陈年铁观音或老铁,未来可以有好茶喝,那一定选清香型以前的80-90年代传统老工艺的铁观音,才是理想的存储好茶。
