黄茶,名之由来:人们从炒青绿茶中发现,由于杀青、揉捻后干燥不足或不及时,叶色即变黄,于是产生了新的品类--黄茶。


黄茶的制作与绿茶有相似之处,不同点是多一道闷堆工序。这个闷堆过程,是黄茶制法的主要特点,也是它同绿茶的基本区别。绿茶是不发酵的,而黄茶是属于发酵茶类。这道工序有的称之为“闷黄”、“闷堆”,或称之为“初包”、“复包”、“渥堆”。


黄茶,按鲜叶的嫩度和芽叶大小,分为黄芽茶、黄小茶和黄大茶三类。黄芽茶主要有君山银针、蒙顶黄芽和霍山黄芽;黄小茶主要有北港毛尖、沩山毛尖、远安鹿苑茶、皖西黄小茶、浙江平阳黄汤等;黄大茶有安徽霍山、金寨、六安、岳西和湖北英山所产的黄茶和广东大叶青等。


黄芽茶之极品是湖南洞庭君山银针。其成品茶,外形茁壮挺直,重实匀齐,银毫披露,芽身金黄光亮,内质毫香鲜嫩,汤色杏黄明净,滋味甘醇鲜爽。在国际和国内市场上都久负盛名,身价千金(现北京市场零售价每市斤已逾千元)。


安徽霍山黄芽亦属黄芽茶的珍品。霍山茶的生产历史悠久,从唐代起即有生产,明清时即为宫廷贡品。霍山黄大茶,其中又以霍山大化坪金鸡山的金刚台所产的黄大茶最为名贵,干茶色泽自然,呈金黄,香高、味浓、耐泡

The best product of yellow bud tea is Junshan Silver Needle in Dongting, Hunan. The finished tea has a strong and straight appearance, uniform weight and uniformity, with silver hairs disclosed, the buds are golden and shiny, the inner texture is slightly fragrant and tender, the soup color is bright and apricot yellow, and the taste is sweet and fresh. It has a long-standing reputation in the international and domestic markets, and is worth a thousand dollars (the current retail price in the Beijing market has exceeded 1,000 yuan per catty).


Huoshan yellow bud in Anhui is also a treasure of yellow bud tea. Huoshan tea has a long history of production. It has been produced since the Tang Dynasty and was a court tribute in the Ming and Qing Dynasties. Huoshan yellow tea, among which the yellow tea produced at Jingangtai in Jinjishan, Dahuaping, Huoshan is the most precious. The dry tea has natural color, golden color, high fragrance, strong flavor and resistance to foaming.
