陈院士认为,选出适合自己的好茶,要注意以下几点。


根据个人喜好选茶。茶叶越嫩越好,但越嫩,其口味越清淡。选茶要依个人口味,喜欢清爽的可选安吉白茶;喜欢浓厚的可选经过揉搓工艺的毛尖或毛峰。陈院士不喜欢太清淡的茶,购买时基本不选一芽一叶的,常选一芽二叶或一芽三叶的茶。


袋泡茶不一定品质差。常在酒店看到茶包,冲泡方便,喝茶时不用担心茶叶吃到口中,这种茶并不一定品质低。在国外,高品质的茶一般都用茶包,这样做只是为了方便,不能作为衡量茶品质的指标。


不被华丽包装迷惑。有些包装精美的茶虽贵,品质却不一定好,因此贵并非茶叶品质的衡量标准,包装做到基本的防潮、防湿即可。


优先选择大品牌。大品牌的茶叶品质更有保障。同一品牌的茶,尽量选择春茶、嫩茶,也可以选择春茶后期的茶。

根据多年研究与实践,陈院士给出7条喝茶的建议。


不同体质喝不同茶。绿茶性凉,建议胃不好的人喝红茶,新的绿茶放久一点再喝也可以;有肥胖问题的人建议喝乌龙茶、黑茶。


不同季节喝不同茶。建议春天多喝绿茶,冬天喝暖胃红茶。但主要还要看个人喜好。


每天泡两三次茶。不要一壶茶从早喝到晚,茶淡了应倒掉重新泡,一天泡两三次最好。


别喝太浓的茶。不建议喝浓茶,尤其是睡觉前。其中的多酚类化合物会影响矿物质吸收,对神经刺激也大。建议150毫升的水放3克茶叶。


黑茶、红茶用开水泡。有人认为,泡茶时为了避免破坏茶多酚,应用80℃的水,其实未必。陈院士建议,嫩的一芽一叶茶可用低水温泡,而黑茶、红茶完全可用开水泡。


不喝隔夜茶。没有研究显示隔夜茶致癌,但是茶放了一夜,难免有微生物污染,卫生不能保证,所以不建议喝隔夜茶。


密封、低温存茶。陈院士会把茶装满罐子,盖好再用密封袋密封,放到专门储存茶叶的小冰箱。密封、低温可避免茶多酚被氧化,并避免串味。这样保存半年到一年,茶味都不会减。


近年来,茶叶农残、铅、氟超标等问题时常见诸报端,让人们常纠结到底要不要喝茶。陈院士表示,茶不安全的说法多被夸大,茶仍可以放心喝。



选择春茶、红茶和绿茶。若还是担心农残,建议选春茶、红茶和绿茶。6~9月病虫害严重,是喷洒农药的主要月份,在这之前已上市的春茶农残较少;绿茶和红茶多选用嫩叶,而乌龙茶和黑茶多选用老叶,由于茶叶中的农药一部分来自喷洒,一部分从土壤中蓄积,所以采摘越晚的老叶农残含量越高。

重金属铅含量有地域差异。茶叶中的重金属铅主要来自土壤,因此其铅含量高低存在地域差异。目前我国规定,茶叶中铅限量值是5毫克/千克,超标率一般在2%以下。


总体来看,茶叶中的铅残留水平对健康不会构成威胁。

Drink different teas in different seasons. It is recommended to drink more green tea in spring and warm stomach black tea in winter. But it mainly depends on personal preference.


Make tea two or three times a day. Don't drink a pot of tea from morning to night. When the tea is weak, you should pour it out and make it again. It is best to make two or three times a day.


Don't drink too strong tea. It is not recommended to drink strong tea, especially before going to bed. Among them, polyphenolic compounds can affect the absorption of minerals and have great nerve stimulation. It is recommended to put 3 grams of tea in 150 milliliters of water.


Brew black tea and black tea with boiling water. Some people think that in order to avoid destroying tea polyphenols when making tea, it is not necessary to use water at 80°C. Academician Chen suggested that the tender one bud and one leaf tea can be brewed at low water temperature, while dark tea and black tea can be brewed in boiling water.

Store the tea in a sealed, low temperature. Academician Chen will fill the tea jars, cover them and seal them with airtight bags, and put them in a small refrigerator specializing in storing tea. Sealing and low temperature can prevent tea polyphenols from being oxidized and avoid odor. It will keep the tea flavor for half a year to one year.


In recent years, there have been reports on issues such as pesticide residues, lead, and fluorine exceeding the standard in tea, making people often wonder whether or not to drink tea. Academician Chen said that the claims that tea is not safe are often exaggerated, and tea can still be drunk with confidence.



Choose spring tea, black tea, and green tea. If you are still worried about pesticide residues, it is recommended to choose spring tea, black tea and green tea. From June to September, the pests and diseases are severe, which is the main month for spraying pesticides. The spring teas that have been on the market before then have fewer pesticide residues; green tea and black tea mostly use young leaves, while oolong tea and dark tea mostly use old leaves, due to the pesticides in tea. It comes from spraying, and part of it accumulates in the soil, so the later the picking is, the higher the pesticide residue content in the old leaves.

There are regional differences in the content of heavy metal lead. The heavy metal lead in tea mainly comes from the soil, so there are regional differences in its lead content.
