铁观音是什么茶?铁观音是属于乌龙茶类,产于福建省泉州市安溪县,发明于1725—1735年,是中国十大名茶之一乌龙茶类的代表。它介于绿茶和红茶之间,属于半发酵茶类,是我国绿茶、红茶、青茶(乌龙茶)、白茶、黄茶、黑茶、六大茶类之一。铁观音除具有一般茶叶的保健功能外,还具有抗衰老、抗癌症、抗动脉硬化、防治糖尿并减肥健美、防治龋齿、清热降火,敌烟醒酒等功效。


铁观音最好用盖碗泡,水尽量用纯净水来泡,水温九十度左右为宜,第一道水洗茶和暖杯,第二道水十五秒为香,以后每道顺延十五秒,最好不超过七道茶水,若是春茶基本是五道,无明显茶香后属茶渣,虽有味实无保健之效,铁观音非越久越好喝,茶香回味为好茶独有,所以品茶以新茶为佳,且上好铁观音有酸度,若久存则酸度渐失去。在泡行茶过程中,身体保持良好的姿态,头要正、肩要平,动作过程中眼神与动作要和谐自然,在泡茶过程中要沉肩、垂肘、提腕,要用手腕的起伏带动手的动作,切忌肘部高高抬起。冲泡过程中左右手要尽量交替进行,不可总用一只手去完成所有动作,并且左右手尽量不要有交叉动作。冲泡时要掌握高冲低斟原则,即冲水时可悬壶高冲、或根据泡茶的需要采用各种手法,但如果是将茶汤倒出,就一定要压低泡茶器,使茶汤尽量减少在空气中的时间,以保持茶汤的温度和香气。品茶包括四方面内容:一审茶名,二观茶形色泽(干茶、茶汤),三闻茶香(干茶、茶汤),四尝滋味。
