安溪铁观音早秋茶

这两天早晚温度明显下降了不少,格外凉爽,安溪逐渐入秋了。



秋天是铁观音收获的季节,秋香秋香,顾名思义秋茶是一年中铁观音最好的采收时刻。



最近市面开始流行一种说法,铁观音“早秋茶”;以前很少这么说的,一般都认为是暑茶,按时间点,现在处在夏末秋初时节,要说是暑茶很好理解,要说是早秋茶,勉强也可以说得上,但认真推敲起来,就是暑茶,你咋好意思说成是早秋茶呢!



喜欢喝安溪铁观音的都知道,每年的五一前后,是春茶采收时间点,十一前后正好是秋茶采收时间点,恰好很巧的与国家法定大节相吻合,所以春茶、秋茶对于安溪茶人来说都是劳动节。



2019年4月20日是谷雨,也就是清明节半月过后,而5月6日是立夏,立夏节气意味着正式入夏,铁观音春茶刚好处在春末夏初的节点采制,一般茶青过了立夏如果还没采收的,都会被裁剪掉,也就是春茶采收结束,加上春茶往往是多雨天气,所以春茶采制一般时间极短,往往只有三五天,当然这是严格按照节气来制作的,要是时间拖至立夏之后,也是有人采制的,这样的茶品质肯定是比较差的。



之所以称为春茶,是由于茶树经历了一整个冬季和春季,采制的铁观音才称得上春茶,如果按“早秋茶”的说法,时间点上,春茶也可以说是“早暑茶”;“早秋茶”的茶青是在夏季生长,夏末秋初采制的,所以就是暑茶,“早秋茶”只是商家的一种兜售方法,是不是秋茶,我们自己种茶的还不清楚嘛。





茶树最近才刚刚修建完,秋茶茶芽都还没冒出来呢!而且从节气上来看,气候也才刚刚入秋,我们是没有采制暑茶的,修剪掉的鲜叶,刚好当作茶树的肥料;今天是9月2日,而8月8日是立秋,23日是处暑,9月8日是白露,刚好在处暑前后修剪茶树;由于铁观音茶树冒芽至茶叶开面可采,大约在55天左右,刚好在国庆前后进入采制时间点,今年的寒露是10月8日,我一直强调,寒露是炒制铁观音的一个极好的时间点,寒露前后的茶也被认为是最好的铁观音秋茶,这样的茶青生长经历整个秋季,寒露节气一周后,天气越来越冷,已经不大适合采制铁观音,寒露过后半个月就是霜降,离立冬已不远,都说秋白露,茶最好,秋茶铁观音茶青生长刚好经历白露前后的完整周期,这样的茶才配得上秋茶,与春茶铁观音的生长相呼应,而“早秋茶”明明是在夏季生长的茶青,怎么能混淆、误导消费者呢!



根据茶树的生长周期,如果赶暑茶,都会或多或少影响秋茶茶青的自然生长周期,时间周期稍短,有点类似于早产儿的意思,这样对制作秋茶是有一定影响的,一般现在铁观音的行情为大众消费价格,基本没啥农户会去赶制暑茶,很多农户春茶都放弃采制,只有那些追求数量、走量的厂家、生产者才会去炒制,每年就盼着秋茶的收成,没必要做吃力不讨好的暑茶。



反正我站在我的角度我是不认可“早秋茶”这一说法的,至于别人怎么说,那是别人的事,做好自己就好了,如果您喜欢喝安溪铁观音,建议您再等等,也就一个来月,就是秋茶采收了,实在等不及,可以先喝喝今年的春茶应付一下,相信我,春茶绝对比暑茶、所谓的“早秋茶”好喝,暑茶除了便宜,应该没啥好处;反正我们自己也是不喝暑茶的,现在也是喝春茶,如果您看重的是价格,那暑茶会是不错的选择,除了便宜就是便宜,铁观音秋茶都会比春茶贵一些,这个是每年铁观音的正常市场价格走向。
