观音韵---兰花香,是优质铁观音的象征,但不是铁观音就具备兰花香、观音韵。



铁观音既是茶树名又是茶叶名,这是安溪铁观音区别于其他地方对于茶叶的命名;只要是铁观音茶树采摘的茶青制成的茶叶都叫铁观音,因产自安溪境内,又称安溪铁观音。



广告里最常听到的铁观音是观音韵、兰花香,其实这是对优质铁观音的定义,大多数铁观音并非具备这两个特征,一般以正炒的铁观音最容易产生兰花香,兰花香是优雅的香,让人心情愉悦,兰花香是摇出来的,这也是对制茶师傅制作技术的考验。



铁观音的神奇之处在于制作技艺,而制作成一泡好的铁观音不仅仅依赖于技术,也同时依赖于天气、地理、还有茶树本身;这就使得要获得一泡优质铁观音,变得相当不易,也正因为如此,铁观音的价格曾现金字塔型,贵的很贵,大多数却低廉,虽然都是铁观音,但品质却是天壤之别。




比如同一个师傅,采制同一片山青,同一季做的茶叶,每天品质都是不一样的,随着天气的变化,往往呈现中间好,两头差的情况;又如同一个师傅,采制同一片山青,同一天做的茶叶,前后相差几个时辰也是不一样的,炒青的时间不同,成品也是不同的,当然其区别不如隔天的差那么大,除非做茶水平实在太差了。



铁观音茶受到外界的干扰因素太明显了,以至于茶叶的品质飘忽不定,即便是制成的成品,在存储和运输的过程中也在无时无刻发生着微妙的变化,因为铁观音是半发酵茶,在运输和存储的过程中,外界环境也是在不断变化之中的,其间对铁观音的品质同样也有着微妙的影响。这也就是有些铁观音一开始品质有轻微的瑕疵,但随着存储一段时间,反而品质转好了,有些是一开始品质极佳,过一段时间,反而不如一开始那么好。



外界环境对茶叶的影响尚且如此,更不用说制茶了,由于每个师傅制茶不尽相同,这就导致每个师傅制作出来的成品也不一样,因而铁观音虽然只以歪尾芽一个正宗品种,却能制做出无数种口味的铁观音,加上海拔、土壤、天气、树龄等一系列的变化,可以组合出数不清的铁观音口味,虽然有些品质是相近的,但也是不同的。铁观音就像一份试卷,能考出几分,不仅看考生的个人资质,还跟老师抓题、考生考试时的心情、复习的内容等等有关,即便所有的条件都一样,还有一点点的运气成分在左右着结果。这就是铁观音的神奇、难点、痛点。



至于观音韵那就更加考验水平了,有说法是新枞茶树更容易做出具备韵味的铁观音,但新枞产量不高,加上水土保持也不建议频繁翻种茶树,而且翻种茶树不但会减产,还间接提高了茶叶价格,在一个喝茶越来越平民价、消费者越来越理性的今天,高端价格的茶叶市场空间有多大,也说不准,这也导致大家制茶越来越往平民消费水准倾斜,因而真正的兰花香、观音韵在当下不是很贵,就是数量稀少。



喝过真正好的铁观音,那真的足以让人留恋忘返,好就是好,除了伤腰包,没有其他大的缺点,如果经济实力允许,还是喝点好茶吧,其实细细算下来,好茶所付出的成本并没有高多少,相反还会收获更多,比如品起来心情更愉悦,好茶更耐泡,这也是省钱的一方面,当然前提还是建立在适合自己口味的基础上,适者为珍,适合自己的才是最好的,在适合自己的基础之上,在允许的条件下,选择最好的茶,才是最英明的决定。


即便我们自己种茶制茶,如果遇上别人家的比我们自己的好,我还是很乐意掏钱买些别人的铁观音茶来尝尝,不为什么,一来别人比我们的好,二来在品茶的过程中也能学习一下别人,岂不妙哉。
