铁观音 三叶抱一芯 春茶浓、夏茶涩、要好喝、秋白露

铁观音有“春水秋香”、“春茶浓、夏茶涩、要好喝、秋白露”的说法,昨天友人终于闲下来开始对秋香铁观音进行拣剔筛选了,原来这拣剔也大有讲究。


铁观音“三叶抱一芯”,在拣剔的过程中,要将梗剔除,除此之外,(从下至上)第一叶若是叶片过于粗老,呈现偏黄,是需要被选出来的,但正常的第一叶香气是比较高的;第二叶嫩度适中,内含物和香气是比较均衡的,第三叶偏嫩,在制作过程中容易红变,干茶也会呈现红色,这样的茶叶在高档茶里也是要被筛选出来的。铁观音素有“美如观音重如铁”的称呼,想来这拣剔的高要求也是给它加分不少!


其实,喝铁观音已经成为安溪人的习惯,茶米油盐酱醋茶,茶是不能少的,在当地,铁观音也被衍生出不少喝法:


蜜藏铁观音


在安溪,许多家庭都有备小瓦罐装着铁观音蜜茶,大家都叫“蜜藏铁观音”。橱柜底下阴凉的角落里,藏着一个古老的小瓦罐。家里人有谁肠胃不适,或腹泻或便秘,或上火或腹胀,祖母会拿出她的宝贝,用干净的小勺子弄出一些铁观音蜜茶,泡上一壶让他好好喝,问题不知不觉间就解决了,真是有奇效啊!


铁观音蜜茶制作其实很简单的,先把备用的优质铁观音茶放在热锅里再炒炒,主要是要除去多余的水份,防变质,炒热后放着自然冷却,装入小瓦罐中,半罐为宜,慢慢倒入蜂蜜(冬蜜),八分为好,因为茶叶与蜂蜜结合后会略膨胀,然后密封常温储存即可,宜避光、防潮、防异味。


陈年蜜茶效果更好,有调理肠胃、润肠通秘、清火养肝、消食安神、去油降压、润肺止咳等功效。蜜茶的冲泡与平常泡茶一样,茶汤具有安溪铁观音兰花韵香和蜂蜜天然蜂香,保健功效可不一般。



高悬梁的柚子茶


你见过高悬在梁上的柚子茶?在安溪,没说的话,即便你看到房梁上高挂着个黑乎乎的圆球,你也不知人家葫芦里卖的什么药,其实,高悬在梁上的是安溪铁观音柚子茶,这也是一种小偏方。


一个家庭制作一颗柚子茶作药用,能用上好几年的。柚子茶的制作可不简单,备用选个柚子,个头大的好操作,把柚子从顶部切开,柚盖子留着用,用小刀配合着汤匙,小心地把里面的柚果肉取出来,然后,把上好的铁观音茶与一部分柚果肉揉拌均匀,再放回到柚壳里去,用汤匙尽力压实,待铁观音茶填满了,最后把切开的柚盖放上去,把它缝合好,从外观看俨然还是一颗完好无损的新鲜柚子,放到网兜里,悬到高处,这样通风,可保存多年不变质,但是制作好柚子茶外皮会一天天萎缩变小变黑,里面的茶依然是好的,药用时拿出来泡茶是满室清香,茶香柚香融合在一起,真是绝配。


安溪铁观音柚茶,具有下气、化痰、润肺的功效,保存好的话,越是陈年越好,对慢性咳嗽,消化不良等症有很好的疗效。据《本草纲目》记载,“柚茶饮食,去肠胃中恶气,解酒毒,治饮酒人口气,不思食口淡,化痰止咳”。在我国古代以及日本、韩国等国家都吃柚子茶的习惯。



秋季铁观音当然还得清饮一下,因茶树日照时间长、气温稍低、有利于鲜叶中芳香物质的形成和积累,香气高扬。若要说秋天的香气有哪些?这秋香铁观音得算一个。

Tieguanyin


In Anxi, many families have small crock pots containing Tieguanyin honey tea, which everyone calls "Honey Tibetan Tieguanyin". In a shady corner under the cupboard, there is an old small earthen jar hidden. If anyone in the family has gastrointestinal discomfort, or diarrhea or constipation, or getting angry or bloating, grandmother will take out her baby, use a clean spoon to make some Tieguanyin honey tea, and make a pot for him to drink well. The problem is unknown. It was solved without realizing it, it's really a miraculous effect!


The production of Tieguanyin honey tea is actually very simple. First put the spare high-quality Tieguanyin tea in a hot pot and then stir fry. The main purpose is to remove excess water and prevent deterioration. After frying, let it cool naturally and put it in small pieces. In a crock pot, half a pot is appropriate. Pour honey (winter honey) slowly. Eighth is good, because the tea and honey will expand slightly after being combined, and then store it in a sealed room at room temperature. It should be protected from light, moisture, and peculiar smell.


Aged honey tea has a better effect. Grapefruit tea


Have you ever seen grapefruit tea hanging high on the beam? In Anxi, if you didn’t say anything, even if you see a black ball hanging high on the beam, you don’t know what medicine is sold in the gourd. In fact, the one hanging high on the beam is Anxi Tieguanyin grapefruit tea. This is also a small remedy.


A family makes a grapefruit tea for medicinal purposes, which can be used for several years. The preparation of grapefruit tea is not easy. Choose a grapefruit as a spare. The big one is easy to operate. Cut the grapefruit from the top. Keep the grapefruit lid for use. Use a knife to match the spoon. Carefully take out the grapefruit pulp inside, and then put it on. Knead the good Tieguanyin tea with a part of the pomelo pulp evenly, then put it back into the pomelo shell, and use a spoon to compact it as best as you can. Anxi Tieguanyin grapefruit tea has the effects of lowering qi, resolving phlegm, and moisturizing the lungs. If it is stored well, it will be better with age. It has a good effect on chronic cough, indigestion and other diseases. According to the "Compendium of Materia Medica", "Grapefruit tea diet can eliminate gastrointestinal malaise, relieve alcohol toxins, treat alcoholic gas, not think about food, reduce phlegm and relieve cough." In ancient my country, as well as in Japan, South Korea and other countries, it was a habit to eat grapefruit tea.



Of course, Tieguanyin has to be drunk in autumn, because the tea tree has a long sunshine time and a slightly lower temperature, which is conducive to the formation and accumulation of aromatic substances in the fresh leaves, and the aroma is high.
