铁观音含有较高的氨基酸、维生素、矿物质、茶多酚和生物碱,有多种营养和药效成分,具有养生保健的功能。于民国八年自福建安溪引进木栅区试种,分“红心铁观音”及“青心铁观音”两种,主要产区在文山期树属横张型,枝干粗硬,叶较稀松,芽少叶厚,产量不高,但制包种茶品质高,产期较青心乌龙晚。其树形稍,叶呈椭圆形,叶厚肉多。叶片平坦展开。


福建安溪县既是世界名茶的故乡,也是全国名茶乌龙茶的发源地,又是福建省乌龙茶出口的基地县市。安溪产茶历史悠久,自然条件得天独厚,铁观音茶叶品质优良。



鉴别方法


外形:条索肥壮、圆整呈蜻蜓头、沉重,枝心硬,枝头皮整齐,叶大部分向叶背卷曲,色泽乌黑油润,砂绿明显(新工艺中,红镶边大多已经去除)。枝身圆,梗皮红亮,叶柄宽肥厚(棕叶蒂),叶片肥厚软亮,叶面呈波状,称“绸缎面”。



察色:汤色金黄,浓艳清澈,茶叶冲泡展开后叶底肥厚明亮(铁观音茶叶特征之一叶背外曲),具绸面光泽,此为上,汤色暗红者次之。


闻香:精品安溪铁观音茶叶茶汤香味鲜溢,启盖端杯轻闻,其独特香气即芬芳扑鼻,且馥郁持久,令人心醉神怡。有“七泡有余香”之誉。



近来国内外的试验研究表明,安溪铁观音所含的香气成分种类最为丰富,而且中、低沸点香气组分所占比重明显大于用其他品种茶树鲜叶制成的乌龙茶。因而安溪铁观音茶叶独特的香气令人心怡神醉,一杯铁观音,杯盖开启立即芬芳扑鼻,满室生香。


贮藏建议:一般要求低温和密封真空,这样在较长的时间内可以保证铁观音的色香味。采用真空压缩包装法,并附有外罐包装可达到最佳效果。铁观音作为一种饮料,不可以永久保存,一直放在冰冻箱里零下5度保鲜,最多不要超过一年,以半年内喝完为佳。


相传, 1720年前后,安溪尧阳松岩村(又名松林头村)有个老茶农魏荫(1703-1775),勤于种茶,又笃信佛教,敬奉观音。每天早晚一定在观音佛前敬奉一杯清茶,儿十年如一日,从未间断,有一天晚上,他睡熟了,朦胧中梦见自己扛着锄头走出家门,他来到一条溪涧旁边,在石缝中忽然发现一株茶树,枝壮叶茂,芳香诱人,跟自己所见过的茶树不同……第二天早晨,他顺着昨夜梦中的道路寻找,果然在观音仑打石坑的石隙间,找到梦中的条树。仔细观看,只见茶叶椭圆,叶肉肥厚,嫩芽紫红,青翠欲滴:魏荫十分高兴,将这株条树挖回种在家小一口铁鼎里,悉心培育。因这茶是观音托梦得到的,取名"铁观音"。

Fujian Anxi County is not only the hometown of world famous teas, but also the birthplace of national famous tea oolong tea, and it is also the base county and city of oolong tea export in Fujian Province. Anxi has a long history of tea production, with unique natural conditions and excellent tea quality.



Identification method


Appearance: The strands are fat and strong, round and have dragonfly heads, heavy, with hard cores, neat scalps, most of the leaves curled toward the back of the leaves, the color is black and oily, and the sandy green is obvious (in the new process, most of the red borders have been removed) . The branches are round, the stems are red and shiny, the petioles are broad and plump (brown leaf pedicles), the leaves are plump and soft and shiny, and the leaf surface is wavy, which is called "satin surface".



Observation of color: the color of the soup is golden, rich and clear. After the tea is brewed, the bottom of the leaf is thick and bright (one of the characteristics of Tieguanyin tea leaves), with a silk surface luster, this is the top, and the soup is dark red.


Smell the fragrance: The fine Anxi Tieguanyin tea tea soup has a fresh fragrance, and it is lightly smelled after opening the cup. Its unique fragrance is fragrant and long-lasting, which is intoxicating. It has the reputation of "seven foams with lingering fragrance".



Recent domestic and foreign experimental studies have shown that Anxi Tieguanyin contains the most abundant types of aroma components, and the proportion of middle and low boiling point aroma components is significantly greater than that of oolong tea made from fresh leaves of other varieties of tea trees. Therefore, the unique aroma of Anxi Tieguanyin tea leaves you intoxicated. A cup of Tieguanyin tea is immediately fragrant and fragrant when the lid is opened, and the room is full of fragrance.


Storage recommendations: generally require low temperature and sealed vacuum, so that the color and fragrance of Tieguanyin can be guaranteed for a long time. The best effect can be achieved by adopting the vacuum compression packaging method and attaching the outer tank packaging. As a kind of beverage, Tieguanyin cannot be stored forever. It should be kept fresh at minus 5 degrees Celsius in a freezer, no more than one year at most, and it is better to drink it within half a year.


According to legend, around 1720, there was an old tea farmer Wei Yin (1703-1775) in Songyan Village (also known as Songlintou Village) in Yaoyang, Anxi.
