工夫茶,这三个字在2020年赚足了眼球。盛行于福建和广东的工夫茶文化受到更多人的关注。近日,一场关于福建与广东两省工夫茶的深刻对话在福建安溪展开。在这场盛会中,持续半年的第四届安溪铁观音大师赛也圆满落下帷幕。




大师赛颁奖仪式上,来自安溪县龙涓乡的陈建平、李凯林,分别以91分、89.11分获得了“安溪铁观音大师”称号,他们将各自获得100万元的工作研究经费;而被评为“安溪铁观音名匠”的8名匠人:林森泉、陈伟昌、苏金带、陈双炎、詹朱祥、陈志鹏、谢振邦、林辉毅,也将分别获得工作研究经费5万元。大师将被直接认定为泉州市第四层次人才,名匠将被直接认定为泉州市第五层次人才。





工夫茶是一种茶俗、茶艺,流传于福建省、广东省及周边地区并已推广流传于全国、全世界。在工夫茶论坛上,中国工程院院士刘仲华、国家级非物质文化遗产潮州工夫茶艺代表性传承人叶汉钟、国家级非物质文化遗产乌龙茶制作技艺(铁观音制作技艺)代表性传承人王文礼3位在茶行业、乌龙茶领域较具代表性的人物在安溪论道,共同揭示安溪铁观音与潮州工夫茶的健康价值、精神文化价值、社会经济价值。




刘仲华作《安溪铁观音与健康中国茶》主旨演讲。他提到,随着人民对生活品质的需求提高,茶叶的健康功效和安全属性会被更加重视。不同类型的安溪铁观音,健康功效也不尽相同,清香型铁观音延缓衰老能力更强,浓香型铁观音护肝降脂作用更佳,陈香型铁观音抗炎清火效果更好。他倡导大家用辩证的态度去认识茶叶的效用。




福建乌龙茶与广东乌龙茶同宗同脉,在历史传承中演变出了各具风格的独特性,叶汉钟认为工夫茶是一种茶汤的艺术,在《潮州工夫茶与安溪铁观音》演讲中,叶汉钟对比两大乌龙茶品类的差异化与共同点,提出共同保护工夫茶的源头根脉,以不断建设标准化来推进工夫茶的传承,并在发展中创新融合。王文礼则通过解说《工夫茶—安溪铁观音的独特魅力》,让人们更加深刻地认识安溪铁观音中的工夫。他说,工夫茶是沏泡的学问和品饮的工夫,而铁观音的独特魅力就在于“一香二韵三工夫”。

They will each receive 1 million yuan in work and research funding; and they will be named The eight craftsmen of "Anxi Tieguanyin Master": Lin Senquan, Chen Weichang, Su Jindai, Chen Shuangyan, Zhan Zhuxiang, Chen Zhipeng, Xie Zhenbang, and Lin Huiyi will also receive work and research funding of 50,000 yuan. The master will be directly recognized as the fourth-level talent in Quanzhou, and the master craftsman will be directly recognized as the fifth-level talent in Quanzhou.





Gongfu tea is a kind of tea custom and tea art, spread in Fujian Province, Guangdong Province and surrounding areas, and has been spread throughout the country and the world. At the Gongfu Tea Forum, Liu Zhonghua, an academician of the Chinese Academy of Engineering, Ye Hanzhong, the representative inheritor of Chaozhou Gongfu tea art, the national intangible cultural heritage, and Wang Wenli, the representative inheritor of the national intangible cultural heritage oolong tea production technique (Tieguanyin production technique), are in tea More representative figures in the industry and the field of oolong tea discuss the Tao in Anxi, jointly revealing the health value, spiritual and cultural value, and socio-economic value of Anxi Tieguanyin and Chaozhou Gongfu tea.




Liu Zhonghua gave a keynote speech on "Anxi Tieguanyin and Healthy Chinese Tea". He mentioned that as people's demand for quality of life increases, the health and safety properties of tea will be more valued. Different types of Anxi Tieguanyin have different health effects. The fragrant Tieguanyin has a stronger ability to delay aging, the aromatic Tieguanyin has better liver and lipid-lowering effects, and the old-scented Tieguanyin has better anti-inflammatory and clear fire effects. He advocated that everyone should use a dialectical attitude to understand the effects of tea.




Fujian Oolong tea and Guangdong Oolong tea share the same origin, and have evolved their unique styles in historical inheritance. Ye Hanzhong believes that Gongfu tea is a kind of art of tea soup. In his speech "Chaozhou Gongfu Tea and Anxi Tieguanyin", Ye Hanzhong contrasted the two The differentiation and commonality of the big oolong tea categories propose to jointly protect the roots of Gongfu tea, promote the inheritance of Gongfu tea through continuous construction of standardization, and innovate and integrate in development. Wang Wenli explained the "Gongfu Tea—The Unique Charm of Anxi Tieguanyin" to give people a deeper understanding of the work of Anxi Tieguanyin. He said that Gongfu tea is the knowledge of brewing and the time of drinking, and the unique charm of Tieguanyin lies in "one fragrance, two rhymes and three skills".
