铁观音(tiě guān yīn)茶,中国传统名茶,属于青茶类,是中国十大名茶之一。原产于福建泉州市安溪县西坪镇,发现于1723-1735年。"铁观音"既是茶名,也是茶树品种名,铁观音茶介于绿茶和红茶之间,属于半发酵茶类,铁观音独具"观音韵",清香雅韵,冲泡后有天然的兰花香,滋味纯浓,香气馥郁持久,有"七泡有余香"之誉 。除具有一般茶叶的保健功能外,还具有抗衰老、抗动脉硬化、防治糖尿病、减肥健美、防治龋齿、清热降火,敌烟醒酒等功效。


铁观音含有较高的氨基酸、维生素、矿物质、茶多酚和生物碱,有多种营养和药效成分,具有养生保健的功能。于民国八年自福建安溪引进木栅区试种,分"红心铁观音"及"青心铁观音"两种,主要产区在文山期树属横张型,枝干粗硬,叶较稀松,芽少叶厚,产量不高,但制包种茶品质高,产期较青心乌龙晚。其树形稍,叶呈椭圆形,叶厚肉多。叶片平坦展开。




首先是产量最大,受面较广的绿茶。


绿茶


是不发酵茶,较多保留了鲜叶中的天然物质,茶多酚、咖啡碱保留了85%以上,叶绿素保留50%左右,维生素c也不少。所以绿茶的抗氧化、抗辐射能力是六大茶类中最强的,特别适合女性用来当做日常预防抗衰老的饮品。但是因其咖啡碱含量也较多,所以偏寒性,不能喝太多。


选购绿茶时,要注意不能选外观很翠绿的那种茶。因为好的春茶,它的茶氨酸含量高,外观多是翠绿中泛嫩黄,茶汤的刺激性也会“弱化”,滋味清甜。而外观偏绿的绿茶,往往茶汤苦涩,刺激性重。其实要不要喝绿茶,你只要喝进去,你的身体就会告诉你答案。喝了不舒服,那就别喝了。




红茶


经过发酵,其中咖啡碱含量较低,可溶性糖类、果胶与氨基酸的含量较高,所以相对的刺激性弱,适合怕寒、胃弱的人。但这不意味着红茶有“养胃”的功效,只要茶汤中有咖啡碱的存在,都会对胃肠粘膜形成刺激,只是刺激性大小的区别。市面上,有的红茶可能比绿茶还要寒凉、刺激,这就要看茶叶的品质了!所以选购红茶,一定要从正规安全的渠道,保证质量。


黄茶


比绿茶多一道“闷黄”的工序,“在湿热作用下,茶叶中的蛋白质发生水解和热解,氨基酸总量上升,也促使多糖类水解,可溶性糖的含量相应增加,咖啡碱减少20%左右,”所以黄茶与绿茶相比茶性更温和,喝起来甘醇甜和。但是因为闷黄的工艺较难把握,制作起来费时费力,目前黄茶市场较萎靡,想买到品质优良的,并不容易,所以茶友们在选购的时候要注意。


白茶,


不揉、不炒、不蒸,是靠“晒”出品质的。茶青在自然萎凋过程中,缓慢氧化、水解,黄酮类物质含量较高,单论茶的抗氧化能力,白茶是次于绿茶的,高品质的白茶茶汤鲜甜醇和。白茶有“一年茶,三年药,七年宝”的说法,很多人都会“存新茶,喝老茶 ”,因为老茶味厚、有质感,比较符合大众的口味。


白茶种类按采摘原料的嫩度等级划分:白毫银针>白牡丹>贡眉、寿眉,一般情况下,老白茶的价格比新白茶高,而且年份越久,价格也越高。因为老茶需要费心的存储,人力、物力、电力的支出是一笔不少的费用。所以新手在选购老茶时,要注意对比一下价格,过于低廉的有可能是掺假做旧茶。




青茶(乌龙茶)


乌龙茶的发酵程度,介于绿茶和红茶之间,最大的特点是其丰富多样的香气,各种花香、果香令人心旷神怡。如果是传统乌龙茶,焙火到位,它的寒性会比红茶还低,“适当的焙火,能够有效减少咖啡碱的含量,促进氨基酸与可溶性糖的增加,是茶汤粘稠细滑,茶的寒性便会进一步降低”。


乌龙有四大茶系:闽北乌龙(武夷岩茶)、闽南乌龙(安溪铁观音、漳平水仙)、广东乌龙(凤凰单丛)、台湾乌龙(冻顶乌龙、东方美人),而这些茶叶中因为做青、焙火程度不同,发酵程度有高、低之分,比如清香的铁观音就是轻发酵,寒性偏高,轻焙火的岩茶比足火炭焙的岩茶咖啡碱含量高。所以在选购时,要问清楚商家。


黑茶


是后发酵茶,包括普洱熟茶、安化黑茶、四川藏茶、广西六堡茶、湖北青砖茶、陕西茯茶等。


黑茶的原料多是成熟的一芽四、五叶的新梢,苦涩的酯型儿茶素和咖啡碱含量较低。由于茶叶嫩梗的氨基酸含量是芽叶的1~3倍,所以黑茶的氨基酸、糖类含量都会相对较高。

茶梗在黑茶的制作和后期转化过程中,起着重要作用。所以看到茶梗,不要慌!这里要注意,普洱茶的生茶不属于黑茶类,它是没有经过渥堆发酵的。生普比熟普刺激性大,喝黑茶是不太会影响睡眠的,所以对于晚上想喝茶又怕失眠的朋友们,黑茶是比较适合的。

But this does not mean that black tea has the effect of "nourishing the stomach". As long as there is caffeine in the tea soup, it will stimulate the gastrointestinal mucosa. It is only the difference in the size of the irritation. On the market, some black teas may be cooler and more stimulating than green teas, depending on the quality of the tea leaves! Therefore, when purchasing black tea, it is necessary to ensure the quality from formal and safe channels.

Green Tea (Oolong Tea)


The fermentation degree of oolong tea is between green tea and black tea. If it is traditional oolong tea, its coldness will be lower than that of black tea if it is roasted in place. "Appropriate roasting can effectively reduce the content of caffeine and promote the increase of amino acids and soluble sugars. Sexuality will be further reduced.”


There are four major types of Oolong tea: Northern Fujian Oolong (Wuyi Rock Tea), Southern Fujian Oolong (Anxi Tieguanyin, Zhangping Narcissus), Guangdong Oolong (Phoenix Dancong), Taiwan Oolong (Dongding Oolong, Dongfang Oolong) Beauty), and these teas have different degrees of fermentation due to different degrees of greening and roasting. black tea


It is post-fermented tea, including Pu'er cooked tea, Anhua dark tea, Sichuan Tibetan tea, Guangxi Liubao tea, Hubei green brick tea, Shaanxi Fu tea, etc.


The raw materials of black tea are mostly mature shoots of one bud, four or five leaves, and the content of bitter ester catechin and caffeine is low. Since the amino acid content of tea tender stems is 1 to 3 times that of bud leaves, the amino acid and sugar content of dark tea will be relatively high.

Tea stalks play an important role in the production and later transformation of dark tea. So when you see tea stems, don't panic! It should be noted here that the raw tea of Pu-erh tea does not belong to the category of dark tea, it is not fermented by heaping piles. Raw Pulp is more irritating than cooked Pupu, and drinking dark tea will not affect sleep, so for friends who want to drink tea at night and are afraid of insomnia, dark tea is more suitable.
