85℃是不是最理想的冲泡红茶水温?

茶圈里提到红茶冲泡,85℃是比较流行的冲泡水温,被很多人围着。


很多喝茶的人会认为,冷茶这种新兴时尚的喝茶方式,一时半会儿还能品出来,并不是喝茶的主流。


喝茶或者热茶汤会比较满意。


但是做红茶的时候,水温太高了。开水会烫坏红茶,使茶变酸...


折中来说,85℃显然是泡茶最理想的选择。


烧水泡茶的时候,等一壶水烧开,不要急着泡茶。


等水温降到80多度再泡茶也不迟。




红茶在85℃温水中浸泡,茶香提取效率远优于冷浸和冰浸。


但与开水冲泡相比,还是略显“上不足,下有余”。


冲泡红茶时,开水能充分激发茶香。


茶叶中芳香物质的释放沸点有高、中、低三种。在高温沸水的洗礼下,茶叶中的高沸茶香可以得到更好的释放。


闻一闻,红茶的花香、果香、甜味、蜂蜜等多种香气会更香、更丰富、更高级。

水温不足,只能用70℃或80℃左右的温水冲泡红茶。
