铁观音注水时要注意哪些要点? 不同的注水方式适合泡什么茶?

注水高低


高冲:水流在空气中降温较多,水与茶叶激荡较强。


低冲:水流在空气中降温较少,水与茶叶激荡较弱。

水粗:水注满壶的时间短,冲到壶里的水温高。


水细:水注满壶的时间长,冲到壶里的水温低。


✦注水位置


单边定点:沿着壶的边缘注水,水流不直接接触到茶叶。


正中定点:对着壶的正中注水,即直接对着茶叶冲击。


✦注水走线


螺旋注水:从壶的边缘向着壶的中心旋转注水。


环圈注水:注水时水线沿壶盖或者杯面旋满一周,收水时正好回归出水点。




不同的注水方式适合泡什么茶?


✦悬壶高冲


特意提高水壶注水,让水流击打茶叶翻滚起来,激发茶叶的香气。这种方法比较适合冲击一些香气比较高的,尤其是铁观音、单丛这样的茶。


悬壶高冲除了要把壶提高,还要把握水柱的粗细缓急,准确地把水冲入茶壶中,并看准时机压壶收水,一不小心很容易水满溢出,整体要一气呵成并不是简单。

✦回旋低冲


把水壶放低,采用螺旋式的走向来冲茶,这样让壶的边缘及中间的茶叶都能直接接触水,令茶与水更快更好地接触融合。


这样的注水方式适合红茶及散白茶。或者泡到后面几泡比较淡的时候了,为了促使茶汤尽快浸出,都可以用这种方式。


✦环圈注水


注水时沿壶的边缘旋转一圈,收水时正好回到原点。令壶边缘部分的第一时间接触到水,而慢慢向中心茶叶蔓延,慢慢浸润。


这种方式比较温柔,需要一定的浸泡时间。在冲泡比较细嫩的茶叶时,比如龙井、碧螺春、金骏眉建议采用这个方法。

✦单边定点注水


将注水点固定在边缘的一个地方,而不是直冲茶叶,让茶水慢慢接触融合。


这种方法是最轻柔的,一般是为了避免茶汤浸出过快过多而产生苦涩,如果茶量不小心投放过多,或者茶叶较碎可以使用单边定点注水,并且快速出汤。

正中定点注水是一种较为极端的方式,通常搭配较细的水流缓缓注入。这样只有中间的一小部分茶和水直接接触,其他部分则在一种极其缓慢的节奏下浸出,茶汤的层次感也最明显。


这个方式比较适合滋味比较清新、但层次又比较丰富的茶,比如香气丰富的祁红、英红。

俗话说的“香靠冲,汤靠吊”就是这个意思,想要茶香高扬加强力度和速度,想要茶汤层次丰富就注意注水走线慢慢吊出味。


实际上,注水方法对茶的香气与滋味的影响也非常微妙,也许新手比较难把握。但只要静下心来细细体会,就能感受到这些细节对茶的影响。

What kind of tea is suitable for different water injection methods?


✦ Hanging pot high punch


The water in the kettle is specially raised, so that the water flow hits the tea leaves and tumbles them to stimulate the aroma of the tea leaves. This method is more suitable for impacting some teas with high aroma, especially teas such as Tieguanyin and Dancong.

This method is gentler and requires a certain soaking time. This method is recommended when brewing relatively delicate tea leaves, such as Longjing, Biluochun and Jin Junmei.

Central fixed-point water injection is a more extreme method, usually with a thin stream of water to inject slowly. In this way, only a small part of the tea in the middle is in direct contact with the water, and the other parts are leached in an extremely slow rhythm, and the layering of the tea soup is also the most obvious.


This method is more suitable for teas with fresh taste but rich layers, such as Qihong and Yinghong with rich aroma.
