茶饼茶砖

茶饼是什么?茶饼是茶叶的一种产品形态,一般为圆饼形,实质上是一种蒸压茶,也就是把茶叶蒸压成茶饼形状,这样可以节省运输空间,从而极大方便茶叶的存储转运。大家最熟悉、最常见的是普洱茶饼。茶饼发明之初本是为西藏等地通过茶马古道供给的边茶,后来“边茶内销”,风行全国,成为紧压茶的一大类型——饼茶。




普洱茶属于黑茶——后发酵茶,如今随着茶饼的风潮,各茶类都向茶饼靠拢。近年来大行其道的福建白茶——微发酵茶,绝大多数以茶饼形式出现。乌龙茶(即青茶)——半发酵茶,也从以往的散茶向茶饼“转型”,武夷山岩茶制成的茶饼摆件更是独树一帜,而铁观音也出现了茶饼。像红茶——全发酵茶,亦出现了茶饼包装;黄茶——轻发酵茶,中国特有、号称“茶中帝王”,也有了茶饼。




茶砖是什么?顾名思义,就是把茶叶制成像“砖头”的茶,茶砖与茶饼一样,都是紧压茶、蒸压茶,独特的制茶工艺殊途同归。砖茶最常见的有湖南黑砖茶、四川康砖茶、陕西茯砖茶。这三类茶砖历史上均通过万里茶道或茶马古道外销,传承下来,成为行销全国、享誉国际的茶叶制式。随着茶砖的走俏,云南普洱茶也有由“饼”转“砖”的,福建白茶也出现了“茶砖”,红茶、黄茶、青茶(乌龙茶)亦然。




看来,砖茶也好、饼茶也罢,只是外观形式不同,工艺上都是一种紧压茶;而且,你向我学习,我向你“偷艺”,逐步融合趋同。当然,根于历史传统,系于文化传承,一种茶品的主流还是标志性的,比如普洱茶多为茶饼,安化茶多为茶砖,等等。不管是茶饼还是茶砖,各自的内涵外延又是相当丰富的,像湖南砖茶,又分为黑砖茶、花砖茶、茯砖茶等,茶原料与制作技艺又有区别;像湖北砖茶,也有米砖茶、青砖茶之别,前者属红茶,后者属黑茶。砖茶大多方方正正,棱角分明,但四川的康砖茶却是圆角砖,又算独一份了。




砖茶方正,饼茶圆润,各美其美,行销世界,只要保存得当,几十年下来,茶质会越陈越香,这是散茶无法比拟的。如果你对博大精深的中国茶体系还是有点蒙,多花时间了解自然会越来越明晰。奇特的是,只有绿茶没有厂商制成茶砖或茶砖,这是为什么呢?业内人士认为,绿茶是唯一的不发酵茶,制成茶饼茶砖无法保障品质,且采取蒸压工艺后,茶汤味变苦涩,因而只有绿茶不适宜采取紧压方式制成茶饼茶砖。

Oolong tea (that is, green tea), semi-fermented tea, has also "transformed" from loose tea to tea cakes. For example, black tea - fully fermented tea, also has tea cake packaging; yellow tea - light fermented tea, which is unique to China and known as the "king of tea", also has tea cakes.




What are tea bricks? As the name suggests, it is to make tea into tea like "bricks". Tea bricks and tea cakes are both pressed tea and autoclaved tea. The unique tea-making process has the same goal. The most common brick teas are Hunan black brick tea, Sichuan Kang brick tea, and Shaanxi Fu brick tea. These three types of tea bricks have been exported through the Wanli Tea Ceremony or the Ancient Tea Horse Road in history, and have been passed down to become a nationally and internationally renowned tea system. With the popularity of tea bricks, Yunnan Pu'er tea has also changed from "cake" to "brick", Fujian white tea has also appeared "tea brick", black tea, yellow tea, green tea (Oolong tea) is also the same.




It seems that no matter whether it is brick tea or cake tea, the appearance and form are different, and the craftsmanship is a kind of pressed tea; moreover, you learn from me, and I "steal" from you, gradually integrating and converging. Of course, rooted in historical tradition and cultural heritage, the mainstream of a type of tea is still iconic. For example, Pu’er tea is mostly tea cakes, Anhua tea is mostly tea bricks, and so on. Whether it is tea cake or tea brick, their connotation and extension are quite rich. For example, Hunan brick tea is divided into black brick tea, flower brick tea, Fu brick tea, etc. There are differences in tea raw materials and production techniques; like Hubei brick tea, there are also rice brick tea The difference between green brick tea and green brick tea is that the former belongs to black tea and the latter belongs to black tea. Most of the brick teas are square and square, with clear edges and corners, but Sichuan Kang brick tea is a rounded brick, and it is considered a unique one.




The brick tea is square, the cake tea is round, and each has its own beauty. It is marketed all over the world. As long as it is properly preserved, the quality of the tea will become more old and more fragrant after decades, which is unmatched by loose tea. If you are still a little confused about the extensive and profound Chinese tea system, it will become clearer and clearer if you spend more time understanding. Strangely, only green tea has no manufacturer to make tea bricks or tea bricks, why is this? Industry insiders believe that green tea is the only non-fermented tea, and the quality of tea cakes and tea bricks cannot be guaranteed, and after the autoclaving process, the taste of the tea soup becomes bitter, so only green tea is not suitable for making tea cakes and tea bricks by pressing.
