六大茶类的制作工艺为:


1、绿茶,杀青、揉捻和干燥;2、白茶,萎凋、干燥;3、黄茶,杀青、揉捻、闷黄和干燥;4、红茶,萎凋、揉捻、发酵和干燥;5、黑茶,杀青、揉捻、发酵和干燥;6、青茶,晒青、晾青、做青、杀青、揉捻、锅炒、包揉和干燥。


1、绿茶




绿茶的基本工艺为杀青、揉捻和干燥,属于不发酵茶,茶性偏寒,主要品种有龙井茶、碧螺春、黄山毛峰、六安瓜片、信阳毛尖、安吉白茶、日照绿茶、涌溪火青、太平猴魁等等。


2、白茶

白茶的基本工艺为萎凋、干燥,属于微发酵茶,新茶的茶性偏凉,有一定年份的老茶茶性温和,主要品种有白毫银针、白牡丹、寿眉和贡眉。


3、黄茶



黄茶的基本工艺为杀青、揉捻、闷黄和干燥,属于微发酵茶,茶性偏凉,主要品种有君山银针、霍山黄芽、蒙顶黄芽、远安黄茶、沩山毛尖、平阳黄汤等等。


4、红茶

5、黑茶

6、青茶

6. Green tea
