陈年铁观音冲泡方法


铁观音的冲泡方法和传统的泡茶方式差不多,准备好茶具(茶壶,或半盖茶碗),饮用水(山泉水为佳,也可以是纯净水),


主要分六道工序:


一道洗:先用干净水(可以是开水)把茶具都清洗一遍,避免茶具内还残留其他茶叶的气味。


二道落:用茶匙把铁观音放入茶壶内,可以根据个人喜好放置多少量,大致5-7克为佳。


三道冲:用烧开的水,对准茶壶口,悬壶高冲,可以看到茶叶在茶壶里旋转。


四道刮:开水冲下后,壶上就后漂浮着一层白色泡沫,可以用碗盖轻轻顺着碗边沿刮走,让茶叶干净清新。


五道倒:把第一泡的安溪铁观音茶水倒入茶海中,再倒入并列的各个茶杯,让茶的香气依附在茶具中,过一分钟左右倒掉。


六道点:悬壶高冲,把开水倒入茶壶中,第二泡可以缩短冲泡时间,一分钟左右就可以把茶水倒入茶海和各个茶杯中饮用了,


另外茶友可以根据自己的喝茶的习惯,选择不同香气型的茶,再根据茶叶的香型,衡量茶叶的冲泡次数。




陈年铁观音鉴别方法


鉴别陈年铁观育是一项高深的学问,安溪著名茶师和老茶农观形闻香即可鉴别茶叶优劣,道行高者甚至能品断此茶产何地何村、几年生茶树,特点突出者还能品味出白何名茶师之手。普通的消费者虽然难以企及,但是也可以通过以下几大准则轻松鉴别陈茶与新茶,下面具体来了解下。


从色泽上看,老茶色泽枯暗,而且随着年份的增加,色泽越发枯暗;新茶则色泽油滑。


从汤色上看,老茶汤色深黄,而且随着年份的增加,色泽逐渐变化,由深黄变成褐色,再变成红褐色;新茶则汤色金黄而亮。


从味道上看,老茶味道温和,而且随着时间的推移,越来越平和;新茶则味道鲜爽、浓醇。


从气味上看,老茶闻起微酸,有明显陈旧味,冲泡后微甜回甘;新茶则闻起清香,芾有微弱花香,冲刨后香味更加浓郁。


不少五年际的铁观音经过烘焙加工,可以做到和15年陈差不多,但是有明显烘焙过的火味,真正的陈年铁观音,应当无火味。

Four scrapes: After the boiling water is washed down, a layer of white foam floats on the back of the pot, which can be gently scraped along the edge of the bowl with the lid to keep the tea clean and fresh.


Five-way pouring: Pour the first brewed tea into the tea sea, and then pour it into each tea cup in parallel, let the aroma of the tea adhere to the tea set, and pour it out after a minute or so.


Six points: hang the pot with high flushing, pour the boiling water into the teapot, the second brew can shorten the brewing time, and the tea can be poured into the sea of tea and each teacup for drinking in about a minute.


In addition, tea lovers can choose teas with different aroma types according to their own tea drinking habits, and then measure the number of times the tea is brewed according to the aroma type of the tea leaves.




Identification method of aged Tieguanyin


Identifying aged Tieguanyu is a profound knowledge. Famous tea masters and old tea farmers in Anxi can identify the quality of tea by looking at the shape and smelling the fragrance. Those with high morality can even tell where the tea is produced, what village, and how many years the tea tree has grown. Those with outstanding characteristics can also taste the hands of famous tea masters. Although it is difficult for ordinary consumers to reach, they can easily distinguish old tea from new tea through the following major criteria.


In terms of color, the color of old tea is dull, and as the age increases, the color becomes more and more dull; the color of new tea is oily.


Judging from the color of the soup, the old tea soup is dark yellow, and with the increase of years, the color gradually changes, from dark yellow to brown, and then reddish-brown; the new tea is golden and bright.


In terms of taste, old teas are mild and become more peaceful as time goes on; new teas are fresh and strong.


In terms of smell, the old tea smells slightly sour and has an obvious old taste, and it is slightly sweet and sweet after brewing; the new tea smells fragrant, with a faint floral fragrance, and the fragrance is more intense after brewing.


Many five-year-old Tieguanyin have been baked and processed, which can be similar to the 15-year-old, but they have obvious roasted fire flavor. The real old Tieguanyin should have no fire flavor.
