正山小种的烟种:


1.烟种和无烟种


正山小种分烟种和无烟种,以在制作工艺上是否有用松针或松柴熏制而成的为区分依据:有用松针或松柴熏制的称为“烟正山小种”;没有用松针或松柴熏制的,则称为“无烟正山小种”。正山小种的这两种不同制作工艺生产出来的茶有较为明显的区别。


从外形条索来看,这两种工艺制作出的正山小种的并没有太大区别;无烟正山小种的外形色彩为深褐色,因为熏制的原因,烟正山小种的干茶色彩更黑而润泽些。


其次,从汤色上区别,无烟正山小种汤色红艳,清澈明亮;烟正山小种则色彩更加浓艳。


再次,从内质上区别,这两种工艺制作的正山小种都有明显的甜味,但烟正山小种的桂圆汤香甜味更显著,滋味更甜醇,而且,烟正山小种另具有独特的松烟香味,别具风味。



正山小种的五个花色:


片茶:


外形全部为木耳形的屑片或皱折角片,色泽乌褐,内质香气尚纯,汤色尚红,滋味尚浓略涩,叶底红匀。


末茶:


外形全部为砂粒状末,色泽乌黑或灰褐,内质汤色深暗,香低味粗涩,叶底暗红。采用的原料为保护区内的菜茶。


菜茶:


是武夷山最早的品种之一。其树丛很矮小,枝干较细。是靠种子播种的有性繁育之品种。花盛籽多,可供播种。


叶茶:


传统红碎茶的一种花色,条索紧结匀齐,色泽乌润,内质香气芬芳,汤色红亮,滋味醇厚,叶底红亮多嫩茎。


碎茶:


外形颗粒重实匀齐,色泽乌润或泛棕,内质香气馥郁,汤色红艳,滋味浓强鲜爽,叶底红匀

Lapsang Souchong is divided into tobacco and non-smoked species, based on whether it is smoked with pine needles or pine wood. Smoked with pine needles or pine wood, it is called "smoke-free Zhengshan Souchong". There are obvious differences between the teas produced by these two different production processes of Lassan Souchong.


From the perspective of appearance, there is not much difference between the two kinds of souchong produced by these two processes; the appearance and color of smokeless souchong is dark brown. The tea color is darker and moister.


Secondly, from the color of the soup, Wuyan Zhengshan Souchong soup is red and bright, clear and bright; Yanzhengshan Souchong is more colorful.


Thirdly, from the internal quality difference, the two kinds of production of Zhengshan Souchong have obvious sweetness, but the longan soup of Yanzhengshan Souchong has a more pronounced sweetness and a sweeter taste. The other has a unique pine smoke aroma, unique flavor.



The five colors of Lapsang Souchong:


Tablet tea:


The shape is all fungus-shaped chips or wrinkled horns, the color is dark brown, the inner aroma is still pure, the soup color is still red, the taste is still strong and slightly astringent, and the bottom of the leaves is evenly red.


Final tea:


The shape is all sand-like powder, the color is black or gray-brown, the inner quality of the soup is dark, the fragrance is low and the taste is coarse and astringent, and the bottom of the leaves is dark red. The raw material used is vegetable tea in the reserve.


Vegetable tea:


It is one of the earliest varieties in Wuyi Mountain. The bushes are short and the branches are thin. It is a sexually propagated variety that is sown by seed. There are many flowers and seeds available for sowing.


Leaf tea:


A kind of flower color of traditional broken black tea, the ropes are tight and even, the color is dark and moist, the inner quality is fragrant, the soup color is red and bright, the taste is mellow, and the bottom of the leaves is red and bright with many tender stems.


Broken tea:


The particles are heavy and uniform in appearance, the color is black or brown, the inner quality is fragrant, the soup is red and bright, the taste is strong and fresh, and the bottom of the leaves is red and even.
