铁观音好茶都有哪些标准

铁观音汤色通透明亮




这是最直观判断是否是铁观音好茶的标准。不管茶汤是红、绿、黑、白、黄,关键要“透亮”,汤色透亮除了让人赏心悦目外,还说明:制茶工艺优良,发酵控制合理、无炒焦等现象;茶叶制作、储运得当,茶叶断碎少;储存条件良好,没有灰尘,也没霉变;茶的内含物质丰富,并得到很好的释放。



但冲泡方法必须科学,如果冲泡不当,例如水温过高、浸泡过久等也可能出现茶汤暗混的现象。




还有一种情况需要注意,就是一些多毫的茶,如碧螺春、白毫银针等,冲泡时毫毛脱落容易让人误以为茶汤浑浊,要注意辨别。





苦涩味存在,但很快散去




苦涩是茶的本味,俗话说:“不苦不涩不是茶。”如果茶中少了苦涩味,便会感觉淡薄、单调。



加工到位且合理的茶,苦涩味不显,但还是有的。因为茶本来就有苦涩味,但关键在于能否能够快速散去。




如苦涩味一直留在口腔中,即所谓“盯舌头”,舌面感觉收敛且粗糙,苦涩难受,应该不能算是好茶。





无异味、水味




1、异味,指来自外界的味道,不是茶本身的味道。




异味有两种情况:一是茶叶加工过程有问题,工艺不当,产生的一些品质不佳的味道,如青味、烟味、焦味等;二是存储环节有问题,茶叶变质或吸收了一些外界的气味,如陈味、霉味、香水味等等。




茶叶存放时一定要注意,异味一旦吸收,几乎无法去除,再好的茶也毁了。


 


2、水味,是指茶味和水味分离,出现淡腥味。




水味往往出现在茶汤变淡的时候,但好的茶是不会出现茶水分离的。比如好的龙井,即使茶汤冲得如白水了,也是甜丝丝的,淡而不腥。




叶底鲜活




好茶的叶底,无论六大茶类的哪一种,鲜活是共同的特征。叶底柔嫩有光泽,摸起来光滑,捏起来有一定厚度和弹性。




叶底鲜活说明:茶叶的原料好;叶底是对茶青的还原;茶的制作工艺好,没有把茶做死;冲泡得当,让茶叶充分泡开,又没把茶泡熟,闷坏。




好茶令人愉悦




不要认为这是条主观标准,好茶让人愉悦是因为好茶中的芳香物质和某些成分,喝过会使人心情愉悦,心胸开阔,头脑清醒。




而不好的茶会让人越喝越郁闷,原料不好、工艺不良、储存不当,这样的茶从各方面如果判断不了,你的身体便会告诉你——喝着闷,不舒畅。



所以当你对以上标准都没有把握的话,就把喝着愉悦当作唯一标准吧,毕竟,茶被世界上几乎所有的国家和民族所喜欢,是靠茶的本质——喝茶让人心情舒畅。

There is another situation that needs to be paid attention to, that is, for some teas with more than one centimeters, such as Biluochun, Baihao Yinzhen, etc., the hairs fall off during brewing, which can easily make people mistakenly think that the tea soup is turbid, so pay attention to distinguish.





Bitterness is present but dissipates quickly




Bitterness is the original taste of tea. As the saying goes, "It is not tea that is not bitter or astringent." If there is less bitterness in tea, it will feel thin and monotonous.



Well-processed and reasonable tea, the bitterness is not obvious, but there is still some. Because tea has a bitter taste, but the key is whether it can be quickly dissipated.




If the bitter and astringent taste remains in the mouth, the so-called "staring at the tongue", the tongue surface feels astringent and rough, bitter and unpleasant, and it should not be regarded as a good tea.





No peculiar smell, water smell




1. Odor refers to the taste from the outside world, not the taste of the tea itself.
