If it is changed to a modern agricultural environment, most of the tea trees are "clone" by cuttings. Although the finished product is stable, it is difficult to withstand sudden extreme climates or diseases. Often, some seemingly useless and fickle (unstable) genes of a species are "harmonized" during the breeding process, resulting in the convergence of traits. However, their ability to face environmental challenges has also converged. Just like the hot topic of "banana extinction crisis" in recent years, when the self-cloning of plants reaches a certain level, once a certain pathogen or disease appears and is infected through corresponding channels, it is prone to large-scale devastating disasters. The extinction of entire species is no longer even a fantasy.


Fortunately, the agricultural technology in 1723 was relatively primitive. Tea trees were mostly propagated by seeds, and they could adapt to the frozen years of Anxi with their mutated instincts. The world-famous Tieguanyin tea tree is likely to have "mutated" in this extreme environment.

◬ The birthplace of Tieguanyin mother tree


I don’t know if it’s a coincidence or not, but the Tieguanyin tea tree was discovered by tea farmer Wei Yin in 1723. Legend has it that Guanyin was guided by a dream.


Last spring, Lao Wei took me to the birthplace of the Tieguanyin tea tree in the Wei family - the stone pit at the head of the pine forest in Xiping, Anxi. The mother tree of Tieguanyin grows beside a not very deep stone crevice, and below the mother tree is a rock shaped like a big turtle. On the side, a clear stream of water flows down from the top of the mountain. The waterfall goes downhill. If the viewing angle is zoomed out, the picture is like a big tortoise camel on the mother Tieguanyin tree, guarding this sacred tea tree in a valley surrounded by mountains. The temperature here is pleasant, the mountain wind is cool, and the mountain stream is misty. It really feels like a famous Taoist mountain.


Old Wei said that when the ancestor Wei Yin was looking for the tea tree according to his dream, he once lost his way. Coincidentally, on the rocky ground above the mother tree, there is indeed a white line formed by stones of different materials, leading to where the mother tree is. Now the birthplace of Tieguanyin mother tree still maintains a quiet environment, surrounded by old Guanyin tea trees that are propagated by the method of laying. It is said that Tieguanyin made from these old tea trees has a very special charm, and it is quite different from the tea made by modern cutting and seedling cultivation method, whether it is aroma or charm.

Although they are all asexual reproduction, the tea from the mother tree's layered propagation has a deep flavor and a style close to the mother tree, while the cuttings are much inferior. .

I have been fortunate enough to make Tieguanyin tea greens propagated by the old Wei family by cuttings and layering methods: although the tea greens from the cuttings can withstand heavy shaking, the green flavor is strong, and the clear floral fragrance is not revealed until the greening is finished; And the tea green of the layering method will reveal a strong and clear gardenia fragrance after the second shake, and this floral fragrance will not disperse for a long time until the tea leaves are ready and dissolved in the tea soup. In addition to the aroma, the tea soup is mellow and smooth, the inner substance is rich and thick, and the layered strips are better than cuttings-perhaps this is the key to the uniqueness of Old Wei Tieguanyin.



◬ Purple Bud Tieguanyin


It is a pity that the old Wei-style Tieguanyin has relatively high requirements on tea trees and craftsmanship. Ordinary raw materials can't stand such heavy tossing, and those with insufficient inner quality cannot support such a high degree of fermentation. In addition, the north prefers green tea-style market guidance. , A few years ago, Tieguanyin was full of green tea (the tea was not cooked), and it also laid the foreshadowing of negative evaluations that people feel that Tieguanyin irritates, hurts the stomach, and feels cold. Judging from the majority of Tieguanyin products on the market, such negative reviews are undoubtedly pertinent. However, it seems that there is a misunderstanding in the traditional Tieguanyin that pays attention to making tea green thoroughly and thoroughly, and does not leave room for irritating substances.


As always, we prefer to choose a quiet path that deviates from the popular market, so as to carry out the traditional charm of a local terroir. Tieguanyin has a long history and ranks among the top ten famous teas in China. It is impossible without good tea. It's just that the price of sticking to the tradition is very high, the output is not much, and the price is not cheap. This is already the case with traditional craftsmanship, not to mention giving up the convenient and high-yield cutting method and sticking to the relatively traditional layering method?


In 2018, we launched "Anxi Tieguanyin · Dew in a Bottle" for the first time, and received a lot of comments from tea friends. At the same time, we also heard feedback: tea is good tea, but it is not enough to drink. Therefore, we specially brought a new version of "packed in a wooden box", so that it can be drunk and stored.


Not all teas can stand the test of time in a wooden box, which is one of the original intentions of our insistence on traditional lamination. I was fortunate enough to drink the 40-year-old tea "collected" by Lao Wei, and I was amazed that the activity of the tea can be preserved to this day; and according to Lao Wei, the Tieguanyin selected by the party after repeated screening this time is also of the same style. Let it rain and wind for 40 years", the flavor of the tea can stand up to storage.


In this era of fast money, you can still sink your heart and make a good tea, whether it is for your own requirements, or to satisfy the taste of high-end customers, or based on belief in Guanyin, I believe Neither would be meaningless.
