铁观音好茶茶韵味道

安溪人品评铁观音,碰到观音韵不错,就说“音韵有起”或“音韵有显”,此“韵”何以理解?




这里的铁观音韵,就是指铁观音好的气味。就像女人一样,有风韵的才有女人味,而没有风韵的我们说她没女人味了!




安溪铁观音的音韵,正恰似女人的风韵一样让人深深着迷!





什么是“韵”?





在探讨什么是“铁观音茶韵”(俗称“音韵”)之前,必须先了解什么是“韵”,就基本上明白了“音韵”的意思,依此还会明白一些其他各种各样茶所说的“韵”,如武夷岩茶的“岩韵”,午子绿茶的“幽韵”,普洱茶的“陈韵”等。




华南农业大学茶业副教授郑永球认为:“所谓‘韵’从泛义来讲是指人、特定的物所展现出来的神态气质或风格,是质的最高境界,表明达到同类中的最高品位或意境。”




这个定义有些抽象,那么我们先来说说“风韵犹存”这个成语的含义,这两个“韵”字其实意思一样。我也没去查词典,不能说它的确切含义,但是我们可能会对此有以下的理解:




“是说一个女人有吸引人的地方,受到人们的喜欢。”




“可能是说一个女人的身材不错或脸蛋好看。”




“如果说一个女人风韵犹存,是说这个女人‘性感’吧。”




“除了外表的,我想也包含了这个女人的好的方面的性情或神态,如“温柔体贴、妩媚动人、声音好听等。”“应该是女人吸引人的特别气质。”




以上说的都不错,但我们是否可以这样简单的理解,就是“女人味”,女人好的方面的特质,这些好的特质包含外表的(物质的)或精神的。





把上面的“女人”改成“铁观音”,“音韵”的含义一下子就明白了,既“铁观音味,铁观音好的方面特质,这些好的特质包含物质的或精神的。”




在现实中,人们对“音韵”比较大众的认同是什么意思?如果不是深层次的茶叶文化的探讨或是说到精神方面的,那通常“音韵”的意思最简单的就是“铁观音味”。这里的“味”指气味,因为铁观音最重要的特质就是气味。




好茶“音韵有起”

或“音韵有显”



安溪人品评铁观音,碰到观音韵不错,说是“音韵有起”或“音韵有显”,大多情况下称“韵口”。如果说音韵很重,就是说铁观音的特性很明显,当然是好茶了。如果说音韵不明,就是说铁观音的特性不明显,当然不是好茶了。总之,“音韵”是好的气质或特性。




读者也许会问,铁观音当然有铁观音的味了,这作何解?这里的铁观音味,指铁观音好的气味,这里有比一般更高的要求。像女人,有些是有女人味的有些就没有,有风韵的才有女人味,没有风韵的我们说她没女人味。很好理解吧。




我们说的音韵一般指品茶的过程中对茶叶品质的评价,主要指铁观音特有的好的气味,包括:杯盖的气味、茶水的气味、茶渣和杯底的气味。可单独指其中一种气味,比如说杯盖的音韵有明,但茶水的音韵不一定明显。铁观音的这几个方面的气味并不必然一致,存在一些差异,有的杯盖的气味很好,但茶水的气味并不是很好,有的茶水气味很好,但杯盖的气味并不那么好,也可总的综合说,这个茶的音韵好不好。另外也认为品完茶后的“喉韵”也是音韵的一部分,“喉韵”,就是齿颊留香,喉舌回甘的感觉。

What is "rhyme"?





Before discussing what is "Tieguanyin tea rhyme" (commonly known as "rhyme"), you must first understand what "rhyme" is, then you will basically understand the meaning of "rhyme", and you will also understand some other various teas. The so-called "rhyme", such as the "Yun Yun" of Wuyi Rock Tea, the "Yun Yun" of Meridian Green Tea, and the "Chen Yun" of Pu'er Tea.




Zheng Yongqiu, associate professor of tea industry at South China Agricultural University, believes: "The so-called 'rhyme' in a general sense refers to the demeanor or style displayed by people and specific objects, which is the highest level of quality, indicating the highest taste or artistic conception in the same category. ."




This definition is a bit abstract, so let's first talk about the meaning of the idiom "Charm still exists", these two "rhyme" words actually mean the same. I haven't looked up the dictionary and can't say exactly what it means, but we might have the following understanding of it:




"It means that a woman has something attractive and is liked by people."




"It could be that a woman has a good figure or a good face."




"If you say that a woman is still charming, it means that this woman is 'sexy'."




"In addition to the appearance, I think it also includes the good aspects of the woman's temperament or demeanor, such as "gentle and considerate, charming and moving, and a good voice." ""It should be a woman's attractive special temperament. "




All of the above are good, but can we simply understand it as "femininity", the good qualities of a woman, these good qualities include appearance (material) or spiritual.





Change the "woman" above to "Tieguanyin", and the meaning of "phonology" is immediately clear, that is, "Tieguanyin taste, good aspects of Tieguanyin, these good qualities include material or spiritual."




In reality, what do people mean by the more popular recognition of "phonology"? If it is not a deep-level discussion of tea culture or spiritual aspects, the simplest meaning of "phonology" is "Tieguanyin flavor". The "taste" here refers to smell, because the most important characteristic of Tieguanyin is smell.




Good tea "has a rhythm"

or "phonologically obvious"



Anxi people commented on Tieguanyin, and when they encountered Guanyin, they said that the rhythm was good, and they said that it was "prosperous in phonology" or "prominent in phonology", and in most cases it was called "yunkou". If the phonology is very heavy, it means that the characteristics of Tieguanyin are very obvious, and of course it is a good tea. If the phonology is unclear, it means that the characteristics of Tieguanyin are not obvious, and of course it is not a good tea. In short, "phonology" is a good temperament or characteristic.




Readers may ask, Tieguanyin certainly has the taste of Tieguanyin, what is the explanation for this? The smell of Tieguanyin here refers to the good smell of Tieguanyin, and there are higher requirements than usual. Like women, some are feminine, some are not, and those who have charm are feminine, and those who have no charm are said to be unfeminine. It's easy to understand.




The phonology we are talking about generally refers to the evaluation of the quality of tea leaves in the process of tasting tea, mainly referring to the unique good smell of Tieguanyin, including: the smell of the lid, the smell of tea, the smell of tea residue and the bottom of the cup. It can refer to one of the smells alone. For example, the phonology of the lid of the cup is clear, but the phonology of the tea is not necessarily obvious. The smell of these aspects of Tieguanyin is not necessarily the same, there are some differences, some cup lids smell good, but the smell of tea is not very good, some tea smells good, but the smell of cup lids is not good. So good, it can also be said in general, whether the phonology of this tea is good or not. In addition, it is also believed that the "throat rhyme" after tasting the tea is also a part of the phonology.
