毫香福鼎白茶

“我听说福鼎的白茶都有毫香,连秋寿眉都有,是真的吗?我所了解的寿眉,粗枝大叶、梗粗叶大,可不会有毫香。所以,福鼎有什么过人之处,还能孕育出更香的茶?”

一听可不乐意了,没遇到过不代表不存在。


品质好的白茶,有毫香只是基本特征之一。


不论是白毫银针、白牡丹还是寿眉,不仅有毫香,其它香气也是同样馥郁。


为了打破这位朋友对寿眉的偏见,特意寄了一款2021年的白露寿眉给他。


秋寿眉的毫香虽比春寿眉稍弱,但也是有毫香的。


毫香主要来源于白毫。


换言之,有白毫的好白茶总会有毫香,是刻进DNA里的香气。


而高山茶的环境,适合白茶的生长,白天光照充足,晚上明显温度降低,甚至出现结霜的情况。


昼夜温差大,让白茶积累足够丰富的内质,使茶汤有质感。


下面便仔细说说高山茶的白毫为何更丰沛。






《2》


高山茶园的海拔较高,温度适宜。


像福鼎太姥山,平均海拔600米及以上的茶园便可以称之为高山茶园。


从地理来看,海拔每升高100米,温度就会降低0.6℃,因此,高山茶园的温度比海拔较低的平地茶园来得更低。


而温度低,恰恰表示白茶需要更有利的装备来御寒。


像熊的冬眠,需要在夏季和秋季,吃下足够的食物,将其变成脂肪储存起来,到了冬天不易觅食,便冬眠了。


白茶为了度过寒冷的季节,也需要积累更多的内质,长出更浓密的白毫。


从内到外,一系列防寒措施。


天气寒冷,茶树就努力长出更多的白毫,也意味着白毫中的茶氨酸愈加丰富,毫香越足。

白毫的作用不止带来毫香。


白茶生来自带白毫,这与其树种有关。


其茶青大多采摘于大白茶、水仙茶树以及群体树种。


这些树种的茸毛较丰富、密集,采下的茶青当然白毫密布。


白毫的作用不止前面,能让茶汤毫香十足,还可以防虫。


其中的腺细胞能分泌天然的驱虫物质,让害虫远离茶树,保护茶青不受其害。


白毫还能防雨。


娇嫩的茶青,正是有了白毫的维护,才得以健康成长。


茶树虽喜湿,却不能长时间积水。当降雨量过多时,造成茶青积水,发生沤坏,降低白茶的品质。


而白毫,能让水滴顺其滑落,从而疏散表面的雨水。


防晒也是白毫的作用之一。


所以,别看细小微弱的茶青,实则小小的身体有大大的能量。


白毫是让茶树安心生长,不可或缺的存在,只有好好保护茶青,才能让其专心积累营养物质,带来更美味的茶汤。

The environment of alpine tea is suitable for the growth of white tea, with sufficient light during the day, significantly lower temperature at night, and even frost.


The large temperature difference between day and night allows the white tea to accumulate enough rich endoplasm to make the tea soup have a texture.

The altitude of the alpine tea garden is higher and the temperature is suitable.


Like Taimu Mountain in Fuding, tea gardens with an average altitude of 600 meters and above can be called alpine tea gardens.


From a geographical point of view, the temperature decreases by 0.6 °C for every 100 meters of altitude increase, so the temperature of high mountain tea gardens is lower than that of flat land tea gardens with lower altitudes.


The low temperature just means that white tea needs more favorable equipment to keep out the cold.


Like the hibernation of bears, it needs to eat enough food in summer and autumn to store it as fat. It is difficult to forage for food in winter, so it hibernates.


In order to survive the cold season, white tea also needs to accumulate more endoplasm and grow thicker pekoe.


From inside to outside, a series of cold protection measures.


When the weather is cold, the tea tree tries to grow more pekoe, which means that the theanine in the pekoe is more abundant, and the fragrance is fuller.

Pekoe does more than just bring fragrance.


White tea comes from Pekoe, which is related to its tree species.


Most of its tea greens are picked from large white tea, narcissus tea trees and group tree species.


The hairs of these tree species are rich and dense, and the tea greens picked are of course densely covered with pekoe.


Pekoe's role is not only in the front, it can make the tea soup full of fragrance, and it can also prevent insects.


The gland cells in it can secrete natural insect repellent substances to keep pests away from tea trees and protect tea greens from harm.


Baihao is also rainproof.


The delicate green tea grows healthily because of the maintenance of Pekoe.


Although tea trees like to be wet, they cannot hold water for a long time. When there is too much rainfall, it will cause the green tea to accumulate water, which will lead to retting and reduce the quality of white tea.


Pekoe, on the other hand, allows water droplets to slide down, thereby evacuating rainwater on the surface.


Sunscreen is also one of the roles of Pekoe.


So, don't look at the small and weak tea green, in fact, the small body has great energy.


Pekoe is an indispensable existence for tea trees to grow with peace of mind. Only by protecting the green tea leaves can they concentrate on accumulating nutrients and bring more delicious tea soup.
