那么,铁观音的品质是天然的吗?其实铁观音的优秀在于集天时地利人和为一体,比如:铁观音茶树品种、种植环境、天气要求、土壤要求、茶树翻新、茶质富含量、茶叶芳香物等等,铁观音都要高于其它茶叶品种。铁观音的突出具体表现以下十方面:




一、茶树品种:铁观音茶树被称为“红心歪尾桃”,典型的茶圣陆羽《茶经》所书之紫者上,绿者次。这种品种,本身就独具吸天地精华之优势。



二、种植环境:铁观音的源产地安溪,被称为厦门“后花园”。福建为八闽大地,八山一水一分田,安溪却是9山点水点点田。全县基本没有重工业,连轻工业也很少,特别是产茶区几乎零工业,只有水泥路、房子和汽车展现着现代文明,基本保留纯农业生产。以上这些,都为安溪产好茶提供了良好自然条件。




三、天气要求:茶树的生长特别是香气的形成,天气昼夜温差极为重要,安溪茶山海拔在600米以上,平均海拔800米,是从厦门0海拔过来的第一高山,所以昼夜温差在20度左右,长期云雾萦绕。太阳晒时茶叶会产生光合作用而生成芬芳香气,晚上温度骤然降温,将白天的芬芳香气储藏于茶叶之中。还有充足的降雨量,可以保证茶树的茁壮生长。



四、土壤要求:茶树需要吸天地之精华,良好的土壤对茶树的生长至关重要。安溪山非常多,大都数茶叶种植在山上,所以,茶山上的土壤都是极为有利于茶树生长的,都为铁观音的优良品质提供了坚实的基础。



五、茶树管理:茶树如果生长过快,那么茶叶的营养就会少,生长较早的茶叶已经粗老而新生长的茶叶还很嫩,这样的铁观音难以有好品质,而且做出来的茶叶茶梗多。较好的茶树生长是新长茶叶保持在3-4叶,当第一叶处于老嫩相间时,最后一芽已经长到七成状,这种茶青是加工优质铁观音的基础。所以茶园管理相当重要,既要让茶树正常生长,又不要让茶树过份生长。



六、茶树翻新:铁观音为了保证茶叶品质与营养丰富,铁观音茶树的最佳茶龄为3-8年,三年产量少,但茶叶品质高;5年产量适中,茶叶的品质也好,是铁观音的最佳状态。8年虽然茶叶产量高,但由于茶树的营养在减少,所以茶叶品质也在下降,所以基本上这时茶树考虑挖掉重新种植新茶树。



七、茶叶采摘:铁观音采摘春茶和秋茶,当采摘季节来临,天气显得极为重要,只有连续晴天铁观音才可以采摘,如果遇到下雨天,铁观音茶农一季的付出都会颗粒无收。而且须等到茶叶生长为最佳状态,此时茶叶营养丰富。基本需要生长三四叶,最上芽也需要开到七成状。
